Strawberry cheesecake with and without baking: Delicious recipe ideas with a cookie base and with brownies in a glass

What could be better than a tasty dessert that is also wonderfully easy to prepare? The cheesecake that probably no one can resist has exactly these properties. Added to this is its versatility, as it can be expanded as desired with various types of fruit or flavors such as chocolate. And even for those who are lazy about baking, there are simple recipes without baking. Strawberry season is coming soon, so we would like to provide you with some recipes for strawberry cheesecake. With Oreo, without baking or in a brownie version in a glass – it will be really difficult for you to decide.

You prepare our first cake in three steps - first the base, then the cream and finally thatTopping with strawberries. It's very easy to make and tastes simply amazing!

For the floor:

  • 450 g wholemeal butter biscuits (normal butter biscuits are also suitable)
  • 125g melted butter
  • 75g brown sugar
  • 1 TL Vanilleextrakt

For the cream:

  • 225g cream cheese
  • 400 g sweetened condensed milk
  • 240 g sour cream, room temperature
  • 2 TL Vanilleextrakt
  • 2 tsp freshly squeezed lemon juice
  • 1/2 tsp salt
  • 30 g corn starch
  • 2 eggs, room temperature

For the strawberry topping:

  • 450g strawberries
  • 1 tbsp lemon juice
  • 100g sugar
  • 1 TL Vanilleextrakt
  • 1 tsp cornstarch

Prepare the base

Preheat the oven to 160 degrees. Crush the biscuits and sugar in a mixer and then work in the melted butter and vanilla extract until a moist mass is formed, which you distribute evenly in a greased springform pan (22 cm Ø) and press down well. This works quite well with a glass. Bake the base for about 7 minutes, then let it cool slightly while you prepare the cream. Set the oven to 90 degrees.

Strawberry Cheesecake Recipe – The Cream Cheese Cream

In a bowl, mix the cream cheese with the condensed milk, sour cream, vanilla extract, lemon juice, salt and cornstarch until you have a lump-free cream. Then stir in the eggs one by one. You shouldn't overdo the stirring, otherwise the cream will rise during baking and end up collapsing. Now spread the cream over the cake base. Then you can bake the strawberry cheesecake on the lowest rack for 90 to 120 minutes. You may not open the oven door until the 90 minutes have elapsed at the earliest. The cake is finished baking when only the middle of the cream wobbles slightly,but not the whole thing!

When the cake is ready, leave the oven door ajar so that it can cool slowly for 20 minutes. Once it has cooled completely, wrap it with cling film and chill it in the fridge for at least 4 hours. You can also only chill it after you have spread the strawberry sauce over it.

The topping with strawberries

Before serving, prepare the fruit topping. Halve half of the cleaned strawberries and dice the other half. Then heat the cubes with the lemon juice, vanilla extract and sugar in a small saucepan over medium heat for 5 to 8 minutes or until the fruit pieces are almost pureed. Mix the cornstarch with two tablespoons of water and then stir this mixture into the boiling strawberries. Once the strawberry sauce thickens, stir in the strawberry halves. You then spread this topping on the cream cheese cream, which means your strawberry cheesecake is ready.

If you prefer, you can also use this recipe to make strawberry cheesecake muffins. For this purpose, simply use a muffin tin instead of the springform pan and distribute the base, cream and topping evenly, as described above. Keep in mind that in this case the baking time will be reduced.

No-bake recipe

So your strawberry cheesecakewithout bakingTo get a solid cream, you need gelatine. We present such a variant to you. For the base, use the popular Oreo cookies, but of course you can also prepare another cookie base without eggs.

For the floor:

  • 30 Oreo Biscuits
  • 6 tablespoons unsalted, melted butter

For the cream:

  • 450 g strawberries, cleaned and halved
  • 50g sugar
  • 1 packet of gelatin (powder)
  • 300 g whipped cream (33-35%)
  • 680 g cream cheese
  • 155g powdered sugar

Grease a springform pan (22 cm Ø), crumble the biscuits together with the filling in a mixer and mix them with the butter. Press everything down well, making an edge, then put the springform pan in the fridge while you prepare the cream.

The strawberry cream

To do this, puree the strawberries and, if you wish, remove the seeds by passing the puree through a fine sieve. Heat the strawberry puree with the sugar over medium heat and cook until it thickens. It loses about half of its volume. Stir in the gelatin while cooking and then remove the pan from the heat while continuing to stir until the gelatin is dissolved. Let the whole thing cool down.

Whip the whipped cream in a bowl and separately mix the cream cheese with the powdered sugar. Gradually fold the strawberry puree into the sweetened cream cheese and then the whipped cream. Then spread this cream over the biscuit base and chill the cheesecake in the refrigerator for 6 hours.

You can top the finished cake with whipped cream and strawberries and serve.

Not just in summer, but also elsewhere:Chocolate and strawberriesare simply a heavenly combination – even when it comes to strawberry cheesecake. Therefore, try this delicious brownie cheesecake! The recipe is for a strawberry cheesecake in a glass. Prepare it like this:

  1. Bake browniesaccording to this recipe.
  2. Also prepare the cream cheese topping (you can also mix in a little strawberry jam).
  3. Roughly crumble the cooled brownie batter and divide it into glasses.
  4. Top with the cream and strawberries.
