Ingredients for the base:

  • 1 ripe banana
  • 150 grams of spelled flour
  • 70 grams of almond flour
  • 100 grams coconut oil, melted (alternatively rapeseed oil)
  • 40 ml almond milk, unsweetened
  • 1 THE Backpulver
  • 1 TL Vanilleextrakt

Strawberry topping:

  • 500 grams fresh strawberries, quartered
  • 200 ml almond milk
  • 15 grams of cornstarch

Preparation:

  • Preheat the oven to 180 degrees and line a springform pan with baking paper.
  • For the base, mash the banana with a fork and stir in a large bowl with the almond milk and coconut oil until smooth.
  • Add the spelled and almond flour, baking powder and salt and mix everything into a smooth dough.
  • Pour the dough into the springform pan and bake for about 25 minutes. Allow to cool completely.
  • For the cream, mix the almond milk with the cornstarch in a small saucepan and bring to the boil while stirring.
  • Cook for 3-4 minutes until you get a creamy consistency.
  • Remove from heat and apply to the base.
  • Garnish with fresh strawberries and place in the fridge for 30 minutes.

Preparation:

  • Preheat the oven to 180 degrees and line a baking pan with baking paper.
  • Mix the strawberries in a bowl with 10 grams of coconut flour.
  • Mix eggs, erythritol, coconut oil, almond milk and vanilla extract in a bowl with a whisk until smooth.
  • Gradually add the almond and coconut flour and baking powder and mix to form a smooth dough.
  • Fold in the strawberries and pour the batter into the baking pan.
  • Bake for 55-60 minutes and cover with aluminum foil after 30 minutes.
  • Mix the glaze ingredients in a bowl until smooth.
  • Brush the cooled cake with the glaze and place in the refrigerator for 1 hour.

Ingredients for 9 pieces:

  • 40 grams of almond flour
  • 30 grams of cocoa powder
  • 50 grams of coconut blossom sugar
  • 60 grams of maple syrup
  • 150 grams of almond butter or peanut butter
  • 10 grams of ground flax seeds
  • 10 grams tapioca starch
  • 60ml water
  • 90 grams strawberries, chopped small
  • 60 grams of dark chocolate, chopped finely
  • 1 tsp baking powder
  • 1 TL Vanilleextrakt

Preparation:

  • For the vegan “egg”, mix the linseed and water well in a bowl and let it steep.
  • Preheat the oven to 180 degrees and line a square baking pan with baking paper.
  • Mix the maple syrup, coconut blossom sugar and vanilla extract in a bowl with a whisk until smooth.
  • Add almond flour, cocoa powder, baking powder and tapioca starch and mix well.
  • Add almond butter and vegan egg and stir until smooth.
  • Fold in half of the strawberries and chocolate and pour the batter into the baking pan.
  • Sprinkle with the remaining strawberries and chocolate and bake for 25 minutes.

Strawberry cake without sugar from the Thermomix

Would you like a juicy strawberry cake without sugar from the Thermomix that is also vegan? Creamy, fresh and quick to make – the ideal dessert for warm summer evenings in the garden!

Ingredients base:

  • 40 grams of dates, soaked in hot water for 20 minutes
  • 150 grams of fine oat flakes

Filling:

  • 100 grams of cashew nuts, soaked in water for at least 5 hours
  • 150 ml coconut milk
  • 30 grams of dates, soaked in hot water
  • 70 grams of strawberries
  • 15 grams of psyllium husks
  • Half of the “date water”

Chocolate icing and topping:

  • 25 grams of cocoa powder
  • 30 grams coconut oil, melted
  • Remaining date water
  • Strawberries

Preparation:

  • Cover the dates for the base and the filling in a bowl with around 100-150 ml of hot water.
  • Add the oat flakes and 40 grams of dates to the mixing bowl and mix on level 5 to form a smooth dough. If necessary, add 1-2 tablespoons of water.
  • Press the dough into a springform pan, top with some strawberries and put in the fridge.
  • Place the ingredients for the filling in the mixing bowl and puree at speed 8 until creamy.
  • Spread on the base and place in the fridge for 2 hours.
  • For the chocolate icing, add cocoa powder, coconut oil and water to the mixing bowl and heat on level 4 for 4 minutes.
  • Spread the cake with the chocolate icing and garnish with fresh strawberries.
  • Enjoy!

Vegan strawberry cake without sugar and baking

Creamy, dreamy and quick to make – this no-bake vegan strawberry cake is ideal for a light summer dessert!

Ingredients for the base:

  • 140 grams of almonds
  • 130 grams of dates
  • 1 TL Vanilleextrakt

Strawberry filling:

  • 100 grams of dates, pitted
  • 190 grams of almond butter or peanut butter
  • 80 ml almond milk
  • 180 grams strawberries, chopped small
  • 1 tbsp lemon juice, freshly squeezed
  • 1 TL Vanilleextrakt

Preparation:

  • Put the ingredients for the base in a mixer and process into a sticky dough. Add 1-2 tbsp water if necessary.
  • Line a springform pan with baking paper and spread the dough on it. Put in the fridge.
  • Blend the filling ingredients in a blender until smooth.
  • Spread the filling on the base and decorate with fresh strawberries if desired.
  • Place in the fridge for 4 hours or overnight and enjoy!
