Ingredients for 6 servings:
- 6 peppers
- 110 grams of rice
- 450 grams of ground beef
- 1 medium onion, chopped finely
- 3 cloves of garlic
- 250 grams of diced canned tomatoes
- 2 tbsp tomato paste
- 240 grams of Gouda or mozzarella, grated
- 1 teaspoon dried oregano
- Salt and pepper to taste
Preparation:
- Preheat the oven to 200 degrees.
- Prepare rice in a small pot according to package instructions.
- Heat some olive oil in a large pan over medium heat and fry the onion for about 5 minutes.
- Add the tomato paste and garlic cloves to the pan and continue cooking for 1 minute.
- Add the minced meat and cook for 5-6 minutes, stirring constantly.
- Add the cooked rice and tomatoes. Season with spices and simmer for 5-6 minutes.
- Place the peppers, cut side up, in a baking dish and drizzle with a little olive oil.
- Stuff the peppers with the minced meat mixture and sprinkle with the cheese.
- Cover with aluminum foil and bake for about 30-35 minutes.
- Remove aluminum foil and bake for another 10 minutes or until golden brown.
- Garnish with fresh parsley and you have the perfect stuffed peppers with mince!

- 1 tbsp tomato paste
- 250 ml vegetable broth
- 100 ml water
- 1 teaspoon each paprika powder and dried oregano
- Salt and pepper to taste
- 100 grams of grated cheese of your choice
Preparation:
- Cook rice in a small pot according to package instructions.
- Heat some olive oil in a large pan and sauté the onion.
- Add the zucchini and carrots to the pan and sauté for 3-4 minutes.
- Add rice and cherry tomatoes and season with herbs.
- Mix the cheese into the vegetable mixture and mix well.
- Wash the peppers and cut off the top quarter.
- Stuff the peppers with the rice mixture and place in a large pot.
- Cover with the broth and simmer over medium heat for about 30-40 minutes.

- Halve the peppers lengthwise, remove the seeds and place them cut side up in the baking dish.

- Stir in the couscous, turmeric, paprika powder and salt and let it steep, covered, for 10 minutes.
