Never buy brittle again. Just three ingredients create a truly exceptional, crunchy and delicious sweet that no one can resist. You can make them with nuts of your choice, be it hazelnuts, walnuts, peanuts or almonds. The brittle is ideal as a topping or filling for puddings, tarts and various cakes. It also gives sweet casseroles, such as fruit crumbles, a special crunchy effect. Despite the few ingredients, preparing it could be a bit of a challenge. Recipe step by step
Making brittle yourself can be very easy if you just follow a few tips. The homemade version tastes wonderfully nutty and much better than store-bought. However, you should be very careful when preparing the caramel sauce and not let it burn. With the exception of sugar and butter, the main flavor notes come from the nuts. We therefore recommend that you roast them in the oven or on the stove with a little oil for around 10-15 minutes.
Ingredients:
- 75g sugar
- 1 TL Butter
- 75g chopped nuts
- baking paper
Preparation:
- Place sugar in a large skillet and melt over medium heat. Do not stir at first, otherwise the sugar will not caramelize evenly. Stir once everything is liquid. Add butter and caramelize until light brown.
- Quickly add the chopped nuts to the pan. Stir well until everything is coated in caramel.
- Place the mixture on a piece of baking paper and spread it as flat as possible with a spoon. Place another piece of baking paper on top and roll everything out flat with a rolling pin while the caramel is not yet completely solid.
Depending on the consistency, cut the cooled caramel plate into the desired size using a knife with a lightly oiled blade or your hands. See – making your own brittle can be so easy!
Tips for making brittle yourself
- If you want to give your brittle a special touch, you can add some grated lemon or orange peel. However, you should do this before the mixture has cooled completely so that the flavors can be absorbed well.
- It is best to use a wooden spoon to stir the caramel.
- Be careful not to let the caramel get too dark, otherwise it will taste bitter!
- Packed airtight, the homemade brittle stays crispy for longer. For example, use a screw-top jar that you place in a dry and cool place. This way you can store it for several weeks.
Alternatives to hazelnuts
Making your own brittle actually doesn't just work with hazelnuts. It is just as delicious with:
- peanuts
- walnuts
- Almonds
Or you could even skip the nuts entirely and use coconut, oatmeal, sunflower seeds or sesame seeds instead.
Recipe for sesame brittle without sugar
This is a recipe for those of you who are watching your diet and want to snack a little healthier.
Ingredients for making your own sesame brittle:
- 1 THE BUTTER
- 200 g liquid honey
- 150 g Sesame
- 1 tsp cinnamon (optional)
Preparation:
- First, heat the butter in a pot. Add the honey and cinnamon and cook for 4-5 minutes, stirring constantly.
- Add the sesame seeds and let the mixture caramelize for another 4-5 minutes, stirring constantly. Reduce the heat and continue to cook the mixture until the consistency has a slightly brownish color.
- Set the pot aside and continue stirring until no more foam can be seen. Spread the mixture on a baking tray lined with baking paper and lightly greased. As long as it is still tough, you can cut it into pieces. Once it has hardened, it becomes much easier to break.
Variation my Coconut
This is a really great and very simple recipe with which you can make a crispy and vegan coconut brittle yourself. Depending on your mood, you can add nuts, various seeds or, for example, oat flakes.
Ingredients:
- 100g sugar
- 7 THEThe coconut herd
Make your own coconut brittle Preparation:
- Caramelize the sugar in a saucepan, adding 1 tablespoon of water if necessary. Stir in coconut flakes.
- Spread the mixture flat on a baking tray and allow to cool.
Variation with oat flakes
Oatmeal brittle is a great option for people with a nut allergy and is also much cheaper. The roasted oats give this treat a special and slightly nutty taste.
Make your own oatmeal brittle Ingredients:
- 200 g oat flakes
- 150g sugar
- 30 g Butter
Preparation:
- Roast the oat flakes in the oven for about 10 minutes and set aside.
- Melt butter in a pan and add sugar, stirring constantly. Stir until the mixture turns a light golden yellow color. Stir in the oat flakes.
- Pour the mixture onto baking paper and smooth it out with a wooden spoon.
- After about 1 hour of drying time, break the brittle into small pieces.

- 100g uncooked quinoa
- 80 g nuts of your choice
- 30 g gluten-free oat flakes
- 30 g chia seeds
- 20 g coconut blütenzucker
- 1 pinch of salt
- 30 ml Coconut beer
- 130 ml maple syrup
Preparation:
- Preheat the oven to 180 degrees.
- Put the quinoa, nuts, oat flakes, chia seeds, coconut blossom sugar and salt in a bowl and mix well.
- Heat coconut oil and maple syrup in a saucepan over medium heat for 3-4 minutes and stir.
- Add dry ingredients and let the dough sit for about 10 minutes.
- Spread on a baking sheet and press down lightly with the back of a spoon.
- Bake on the middle rack for 15 minutes, turn the mixture once and bake for another 5 minutes.
- Allow to cool completely and cut with a sharp knife.

Ingredients:
- 300 g couverture of your choice
- 150 ml Sahne
- 3 tbsp apple juice
- 100 g homemade brittle
- Powdered sugar or cocoa powder
Preparation:
- Chop the couverture into small pieces. Bring the cream to the boil in a pot and remove from the heat. Add the couverture and let it melt. Stir in apple juice and let the whole thing cool down.
- Place brittle in a freezer bag and chop finely with a rolling pin. Stir into the lukewarm cream mixture and leave to solidify in the refrigerator overnight.
- Use two teaspoons to scoop out cherry-sized portions of the mixture and form into eggs. Carefully coat the brittle eggs in powdered sugar or cocoa powder.
Almond ice cream with brittle
Ingredients:
- Make your own almond brittle using the recipe above
- 2 egg yolks
- 25 g each of sugar and powdered sugar
- 150 ml milk
- 200 ml Sahne
- 2 drops of bitter almond flavor
- Ice cream maker
Preparation:
- Beat the egg yolks with the powdered sugar in a stainless steel bowl until fluffy.
- Bring the milk, sugar and half of the cream to the boil on the stove, stirring constantly.
- Remove the pan from the heat and carefully stir the hot milk and cream mixture into the egg yolk mixture using a whisk. Pre-chill in the fridge for 1 hour or in the freezer for 15 minutes.
- Now add the bitter almond flavor and the remaining cream and beat again with a hand mixer.
- Pour the ice cream mixture into the cooled container of the ice cream maker and let it freeze for about 15 minutes, stirring constantly. This is where the ice cream gets its creaminess.
- Mix 2/3 of the brittle into the ice cream and let the mixture freeze for another 15 minutes. Decorate with the remaining brittle when serving.
