Ingredients for 8-10 servings:
- 2.5kg whole salmon, scaled and gutted
- 1.5 kg potatoes, peeled and cut into thick slices
- 1 Fenchelknolle
- olive oil
- 1/2 bunch each of fresh dill, fresh tarragon and parsley
- 1 lemon
- Salt and pepper
Preparation:
- Preheat the oven to 200 degrees and drizzle a large baking dish or roasting tray with a little olive oil.
- Place the potatoes in the bottom of the baking dish and season with salt and pepper.
- Cut the fennel into wedges and place on top.
- Drizzle the vegetables generously with olive oil and toss lightly.
- Roughly chop the herbs and mix them with the lemon peel in a small bowl.
- Depending on the size of the fish, make 4 to 6 cuts with a sharp knife on each side and sprinkle with lemon-herb mixture.
- Drizzle the salmon lightly with olive oil and stuff with lemon slices and the remaining herbs.
- Place fish on top of vegetables and bake for 15 minutes.
- Reduce oven temperature to 180 degrees and bake for another 30-40 minutes.
- Serve with a fresh salad and voilà – your whole salmon is ready in the oven.
Crispy salmon in puff pastry recipe

Ingredients for 4-6 servings:
- 1 roll of puff pastry
- 300 grams of salmon fillet
- 140 grams of spinach
- 2 cloves of garlic, finely chopped
- 1 small onion, chopped finely
- 40 grams of breadcrumbs
- 110 grams of cream cheese
- 1 egg, lightly beaten
- 20 Gramm Butter
- 1 tbsp fresh dill, chopped
- 30 grams of Parmesan, grated
- Salt and pepper
Preparation:
- Preheat the oven to 210 degrees and line a baking tray with baking paper.
- Melt the butter in a pan over medium heat and sauté the garlic and onions for 3-4 minutes until translucent.
- Add the spinach to the pan, season with salt and pepper and cook for 2-3 minutes, stirring occasionally.
- Add breadcrumbs, cream cheese, dill and Parmesan and stir until smooth. Remove from heat and set aside.
- Roll out the puff pastry on a floured work surface and place the salmon in the middle.
- Brush the salmon with the spinach mixture and fold the edges of the puff pastry over it, starting with the longer sides and then the shorter ends.
- Brush with the beaten egg and use a sharp measuring knife to score diagonal lines on the top.
- Bake the salmon in puff pastry with spinach for 20-25 minutes until golden brown and crispy.
- Allow to cool slightly and enjoy!

Preparation:
- Preheat the oven to 200 degrees and line a large baking tray with baking paper.
- Mix honey and mustard in a small bowl.
- Season the salmon fillets with salt and pepper and spread the mustard mixture on both sides.
- Roll the salmon first in the breadcrumbs and then in the walnuts and place on the tray.

- 800 Gramm Lachsfilets
- 500 grams of potatoes, waxy
- 100 grams of spinach
- 2 cloves of garlic, finely chopped
- 1 red onion, finely chopped
- 200 grams of cream cheese
- 50 grams of Parmesan, grated
- 300 ml vegetable broth
- 10 grams of wheat flour
- 50 ml white wine, optional
- Salt and pepper
Preparation:
- Cook the potatoes in boiling salted water for about 20 minutes and let them cool.
- Peel the potatoes and cut them into bite-sized pieces.
- Blanch the spinach in boiling salted water for 1 minute, drain and chop roughly.
- Heat some olive oil in a pan over medium heat and fry the onions and garlic for 3-4 minutes until translucent,
- Add the wine, vegetable stock and flour and simmer, stirring occasionally, for 5 minutes until the sauce has thickened.
- Add the parmesan, stir well and remove from the heat.
- Preheat the oven to 180 degrees and lightly grease a baking dish with olive oil or butter.
- Cut the salmon into small cubes and add them to the baking dish with the potatoes and spinach.
- Season with salt and pepper and mix.
- Pour the sauce over it and bake the salmon and potato casserole for about 25 minutes.

Lemon cream sauce:
- 1 small onion, diced small
- The juice and zest of 2 lemons
- 60ml dry white wine, such as Chardonnay or Pino Grigio
- 120 ml Sahne
- 100 Gramm Butter
Preparation:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Place the salmon on top, skin side down, and season with salt and pepper.
- Drizzle lightly with olive oil and bake the salmon in the oven for 10-15 minutes.
- To make the sauce, place onions, lemon juice and zest and wine in a small saucepan and simmer over medium heat for 7-8 minutes, stirring occasionally.
- Stir in cream, bring to a boil and reduce heat.
- Add butter little by little and season with salt.
- Simmer for about 7-8 minutes until the sauce has thickened.
- Drizzle the cream sauce over the salmon and enjoy.
