Ingredients for the dough:
- 250 grams of low-fat quark or Skyr
- 110 grams of grated cheese such as mozzarella or Gouda
- 3 Owner
- Salt and pepper
Filling:
- 150 grams of lean ground beef
- 1/2 onion
- 3 pickles
- 1/2 lettuce
- 1 Tomato
- some iceberg lettuce
- 2 slices of cheddar cheese
- 1 tsp olive oil
- Salt and pepper
Big Mac Sauce:
- 50 Gramm Mayonnaise light
- 1 tbsp ketchup without sugar
- 1 EL Senf
- 1 tbsp sour cream
- a splash of white wine vinegar
- 1 clove of garlic
- 1 gherkin
- 1/2 onion
Preparation:
- Preheat the oven to 180 degrees.
- Place low-fat quark, grated cheese and eggs in a large bowl and mix well. Season with salt and pepper and place the mixture on a baking tray lined with baking paper and smooth it out.
- Bake for about 20 minutes and let cool.
- For the filling, heat olive oil in a pan over medium heat.
- Chop the onion finely and add it to the pan with the minced meat. Fry vigorously for 5 minutes, stirring occasionally, and season with salt and pepper.
- In the meantime, cut the gherkins into thin slices, halve the tomatoes and also cut them into slices. Wash the lettuce and cut it into small pieces.
- For the Big Mac sauce, cut the gherkins, garlic and onion into small cubes. Then add ketchup, mayonnaise, mustard, white wine vinegar, salt and pepper to a bowl and mix well.
- Now spread the dressing on the dough and top with minced meat, processed cheese, cucumbers, lettuce and tomatoes.

Ingredients for the dough:
- 50 grams of almond flour
- 2 tbsp ground psyllium husks
- 2 Owner
- 200 ml almond milk
- Salt and pepper
Filling:
- 200 grams of chicken breast fillet
- 1 tbsp olive oil
- 1 TB Gyros Gewürz
- 1 Tomato
- some leaf lettuce
- 100 grams of coleslaw
- 50 Grams Tzatziki
Preparation:
- Preheat the oven to 180 degrees.
- Put all the ingredients for the dough in a bowl and mix well.
- Spread the dough onto a baking tray lined with baking paper, shape it into a large circle and prick it a few times with a fork.
- Bake for about 10-15 minutes or until the edges start to brown. Allow to cool.
- In the meantime prepare the filling. To do this, cut the meat into thin slices and season with the gyro seasoning.
- Heat olive oil in a pan and fry the meat for about 6-8 minutes until crispy.
- Cut the tomatoes into cubes, wash the lettuce and chop it finely.
- And it's so easy to make your own tzatziki: mix 50 grams of Greek yogurt with 20 grams of quark and 1 teaspoon of lemon juice. Grate a cucumber, squeeze out the water and add it. Mix everything well, season with salt and pepper and let it sit in the fridge for about 1 hour.
- Now top the dough with lettuce, tomatoes, chicken, tzatziki and coleslaw and roll it up tightly. If desired, sprinkle with some sesame and you can enjoy your low carb gyro roll!
