Make your own mint ice cream – 4 refreshing ice cream recipes for the Thermomix

Ingredients:

  • 2 handfuls of fresh peppermint leaves (approx. 15 grams)
  • 140g sugar
  • 1/2 tsp grated lemon peel (optional)
  • 250 ml Sahne
  • 150 g Yoghurt
  • 15 ml milk

Add the fresh peppermint leaves, sugar and grated lemon peel to the Thermomix bowl and pulverize for 5 seconds on level 10. Use a spatula to scrape down the sides and pulverize again for 5 seconds on level 10. Repeat process again. Then add the cream and yoghurt and cook for 2 minutes at 50 degrees on level 3. Pour the mixture into a shallow stainless steel bowl, let it cool and freeze for at least 10 hours or overnight.

Remove the ice cream from the freezer and place it in the refrigerator for about 5 to 10 minutes or until you can cut it into squares. Place the squares in the TM bowl, add 15ml milk and mix on speed 6 for 10 seconds. Place the mint ice cream in a container with an airtight lid and place in the freezer for at least 4 hours.

Mint ice cream with chocolate chips

Mint fans will simply fall in love with this classic combination of chocolate and mint! The ice cream is prepared super quickly in the Thermomix and is wonderful for warm summer evenings. Just spoon and enjoy!

Ingredients:

  • 600 ml whipped cream
  • 300 g sweet condensed milk
  • 1/4 tsp peppermint essence
  • 4 drops of green food coloring
  • 100 g dark chocolate, chocolate chips or chocolate chips

For the chocolate chips: If you are using whole chocolate, you can either chop it roughly on a cutting board or cut it into cubes and grind in the TM bowl on speed 7 for 10 seconds. Set the chopped chocolate aside and rinse the bowl.

Then add the cream, peppermint essence and food coloring to the TM bowl and mix on speed 2 for 30 seconds while pouring the condensed milk through the hole in the lid. Then mix for 1 minute at speed 3.5. Add the chocolate chips and mix on speed 3.5 for 45 seconds or until the mixture looks thick and smooth. Place the mint ice cream in an airtight container and place it in the freezer overnight.

Vegan chocolate mint ice cream

The aroma and taste of mint harmonize wonderfully with both fruits and chocolate. The following is a recipe for chocolate mint ice cream without milk and cream that all chocolate lovers (and vegans) will surely like.

Ingredients:

  • 180 g pitted dates
  • 300 ml boiled water
  • 1 can (400 ml) coconut milk, full fat
  • 1 Tbsp cocoa powder
  • 1 tsp peppermint extract
  • 1 TL Vanilleextrakt

First, soak the dates in hot water for 15 minutes until soft. Then drain (discard the hot water), place in the bowl of the Thermomix and chop for 10 seconds on speed 6. Scrape down the sides of the bowl and chop again on speed 6 for 10 seconds.

Add all other ingredients and mix for 1 minute on speed 9. Scrape the bowl and mix again at speed 9 for 1 minute until the mixture is nice and creamy and free of lumps. (Be careful when removing the lid as the mixture tends to drip everywhere). Pour into a suitable freezer container and freeze the chocolate mint ice cream for 6 hours or overnight.

Tip: If you buy dates that have already been pitted, check whether the stones have been completely removed, as small pieces are often still present.

Fruity strawberry mint ice cream recipe

Ingredients:

  • 500 ml whipped cream
  • 1 cup fresh peppermint leaves

Strawberry syrup

  • 2 cups chopped fresh strawberries
  • 3 tbsp granulated sugar
  • 1/2 tbsp water
  • 1/2 tsp cornstarch

Ice cream

  • 1 can (400 ml) condensed milk
  • 1 TL Vanilleextrakt
  • 1/2 tsp peppermint extract

First, heat the cream and fresh mint in a small saucepan over low heat for a few minutes. Remove the pot from the heat and let the mint steep for about 20 minutes. Place the mixture in the refrigerator for at least an hour. Once the cream is cold, remove the mint leaves. The mint cream must be cold before whipping.

Place the chopped strawberries, water, cornstarch and sugar in a small saucepan and cook the mixture over low heat for a few minutes until the strawberries begin to break down. Remove the strawberry sauce from the heat and let it cool to room temperature.

Place the cold mint cream in a large mixing bowl. Use a mixer to whip the cream until it forms a few peaks. Add the evaporated milk, vanilla extract and peppermint extract. Mix until fully incorporated. Then fold in about half of the strawberry sauce.

Pour the ice cream mixture into a suitable container. Pour the remaining strawberry sauce over it and make swirls on the surface. Freeze the ice cream for at least 6 hours or overnight.

Tip: You can also prepare the ice cream mixture for this recipe in the Thermomix. To do this, first whip the cream until stiff at speed 3.5 and set aside. Then beat the condensed milk, vanilla extract and peppermint extract with the mixer attachment at speed 3.5 for 30 seconds. Add the mint cream and stir on speed 3 for 5 seconds.
