Pumpkin and Honey Muffins – A perfect fall dessert

Ingredients for 15 to 18 pieces:

– approx. 300 g raw pumpkin or 1 teacup cooked and drained pumpkin
– 2 eggs (they should be at room temperature, so take them out of the fridge in good time)
– 1/2 to Theta Öl
– 1/2 Theta Honig
– 2 Teacups Mehl
– a handful of walnuts
– a handful of raisins
– 1 packet of baking powder
– 1 packet of vanilla sugar
– 1/2 tsp cinnamon
– a pinch of salt

1. You should have a wholepumpkinpurchased, you need to prepare it first. To do this you have to cut it open, then remove the seeds and peel it. Then cut the obtained pulp into pieces. This variant is particularly suitable for Halloween, as only the bowl is used for carving and the rest is left over. However, if you don't feel like it or don't have the time to deal with the pumpkin, you can also use pre-cut pumpkin buy in the store.

2. Put the finished pumpkin pieces in a pot. Further add 1 teacup of water and cook the pumpkin until it becomes soft. Next, it's important to drain the pumpkin well. This is important because otherwise the muffins will not be solid but mushy. From the boiled pumpkin you need 1 teacup. Grate or puree it.

3. Now there is the dough it's turn. Using a mixer, break the eggs into a large bowl and add the oil. After mixing everything well, add the honey (if it is hard, it would be advisable to melt it first).

4. Sift the flour and baking powder. Add the other dry products, i.e. the sugar, cinnamon, vanilla sugar and salt and stir everything together with a spoon.

5. Gradually add this mixture to the eggs, stirring constantly, and mix everything together well. Next, add the pumpkin and chopped walnuts to the dough. Now use a spoon to stir again. And the dough is ready.

6. Prepare the muffin pan in which you will put the pumpkin and honey muffins Bake by either greasing them or filling them with paper cases. Pour dough into the mold or the paper cases. Fill the molds 2/3 full so that the dough does not overflow during baking.

7. Bake the muffins with pumpkin and honey in the oven preheated to 180 degrees for 30 to 35 minutes.
