  • 55g breadcrumbs

Boil the potatoes in salted water, then drain them and mash them into a paste, which you then allow to cool slightly. Then stir in the sauerkraut, spices, egg, flour and breadcrumbs and mix everything together well. Then use your hands to shape this mixture into bite-sized balls.

In a pan, heat oil to cover the entire pan by about an inch or two. In the meantime, roll each ball first in the flour, then in the beaten eggs and finally in the breadcrumbs.   • 1 red onion, halved and sliced
  • 1/2 head of red cabbage, the heart removed and the leaves grated
  • 4 tbsp apple cider vinegar
  • 1 tbsp parsley, coarsely chopped
  • Salt and pepper
  • mild mustard for serving

Sandwiches, hot dogs and similar snacks are delicious and perfect for a party. Traditional Bavarian products such as red cabbage, sauerkraut and bratwurst are used for these delicacies as follows: Once you have prepared and cut all the ingredients, the preparation is very quick and easy.

Heat 1 tablespoon of olive oil in a saucepan, add the cumin and cook for about 1 minute, stirring constantly. Then add the onion and cabbage and cook for 5 minutes or until the cabbage begins to soften. Add 2 tablespoons of vinegar, cook for another 4 minutes and let the finished sauerkraut cool for about 15 minutes.

  • 120 ml apple cider vinegar

Place the cumin seeds in a small pan and fry them on all sides for about 3 minutes. Shake them at regular intervals to prevent them from burning. Then put them in a medium glass bowl and mix them with all the other ingredients. Cover the bowl with foil and let the mustard sit at room temperature for two days. You can then puree the mustard finely with a blender or until the desired consistency is achieved. Store the mustard in a sealed jar in the refrigerator for up to 3 months.

Sauerkraut bites with ham in potato skins

  • 225 g cured meat, cooked yourself or bought ready-made
  • 240 g sauerkraut
  • 170g grated Gruyère or other Swiss cheese

Preheat the oven to 200 degrees and spread the whole potatoes on top, having previously pierced them several times with a fork. Bake the potatoes until they are cooked through and the skin is crispy, about 50 minutes. Then take them out of the oven (without turning it off) and let them cool long enough to work with them without burning yourself. Then cut each potato in half lengthwise and remove the potatoes with the help of a spoon. But leave a margin of about half a millimeter.

Brush each peel with the melted butter and season with pepper and salt. Turn the cases over and repeat the steps. Place the potato wrappers back in the oven, skin side up. A few minutes are enough because the casing should just become a little crispier. Then turn the wrappers over and bake for another 2 to 3 minutes or until the edges begin to brown.

Take the potatoes out of the oven again, spread a little salted meat in them, then dressing, sauerkraut and finally cheese. Bake for 4 to 5 minutes until the cheese melts and serve immediately on the buffet.

  • 1/2 bunch parsley, chopped

  • 3 slices of toast, debarked and halved twice diagonally and crosswise (in an X shape)
