Self-labeled cookies

  • 300 g Flour
  • 150 g golden yellow caster sugar (alternatively brown sugar)
  • 150 g unsalted butter
  • 1 large egg
  • 2 TL Vanilla Paste
  • 1/2 tsp salt
  • 400g powdered sugar
  • 100 ml lemon juice
  • food coloring
  • Food sticks
  • Streusel
  • Cookie cutters in matching motifs
  • Piping bag

In a bowl, mix the flour with the butter and salt until a crumbly dough forms. Now add the sugar and stir (if you use brown sugar, you will need to stir longer as it is coarser and melts more slowly). In another bowl, break the eggs with the vanilla paste and add the mixture to the dough. Stir again until a smooth dough forms. Wrap this dough in cling film and let it rest for half an hour before you can cut out the cookies and bake them for Mother's Day.

Preheat the oven to 180 degrees and line a baking tray with baking paper. Then roll out a quarter of the dough and cut out the cookies, which you spread on the baking tray. We recommend not baking more than 9 pieces at once. Place the first tray in the oven for 13 minutes in which you will bake the Mother's Day cookies. Meanwhile, repeat with the next quarter of the dough. But don’t forget the cookies in the oven! When they are ready, let them cool on a grill rack. Then place the next cookies in the oven and continue until you have used up the dough.

Once the cookies are cold, you can decorate them. To do this, mix the powdered sugar with 65 ml lemon juice. The result should be a thick glaze similar to toothpaste. If it's too tough for you, you can stir in a little more lemon juice. Test with a spoon by drawing a line in the icing. If this disappears within 10 seconds, the consistency is correct. Divide the icing into different small bowls depending on how many different colors you want to mix. Start with one color and cover the other bowls with plastic wrap to keep the frosting from drying out. Put a little of the icing in a piping bag and start creating. First draw an outline and let it dry for 5 minutes. Then fill in the inside. You can bake the cookies for more than just Mother's Day. They are also great for other occasions.
