Ingredients:

  • 360 g Allzweckmehl
  • 300 g granulated sugar
  • 3 tsp baking powder
  • 1/2 TL Natron
  • 1/2 tsp salt
  • 2 large eggs
  • 180 ml buttermilk
  • 120 ml vegetable oil
  • Zest of 3 oranges
  • 60 ml freshly squeezed orange juice

Orange glaze ingredients:

  • 180g powdered sugar
  • 3 tbsp freshly squeezed orange juice

Preparation:

  • Mix the flour, granulated sugar, baking powder, baking soda and salt in a bowl. Stir everything with a spoon and set aside.
  • In a larger mixing bowl, combine the eggs, buttermilk, vegetable oil, orange zest and orange juice. Mix with a spatula for 30 seconds.
  • Gradually stir in the dry ingredients until well combined. The dough will be very thick!
  • Cover the bowl with a towel and let the dough rest for 15 minutes. Preheat the oven to 220°C.
  • Line a muffin tin with 12 muffin cups. Fill the molds to the top with dough. You may think that all the dough won't fit in 12 pans, but keep dividing the dough into the pans and filling them full. Use a butter knife to smooth the tops of the muffins if they are lumpy. Sprinkle them with powdered sugar if desired.
  • Bake at 220°C for 7 minutes, then leave in the oven, turn the temperature down to 180°C and bake for a further 13-16 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool in the tin.
  • Prepare the glaze: Mix the powdered sugar and orange juice with a spoon. You may need more orange juice depending on how thin or thick you like the glaze. You can dip the tops of the muffins in the glaze or use a spoon to spread it over the muffins.

  • Zest of 2 oranges
  • 220 g Allzweckmehl
  • 1 tsp baking powder
  • 1 TL Natron
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbsp orange juice
  • 2 tbsp milk
  • 180g fresh or frozen cranberries

Ingredients for the glaze:

  • 120g powdered sugar
  • 3 tbsp orange juice

Preparation:

  • Preheat the oven to 220°C. Spray a 12-count muffin tin with nonstick spray or line it with paper liners and set aside.
  • In a medium bowl, beat the butter with a hand mixer or mixer on high speed until smooth and creamy, about 1 minute. Add the granulated sugar and brown sugar and beat on high until creamy, about 2 minutes. Add the yogurt, eggs and vanilla extract. Beat the mixture on medium speed for 1 minute, then switch to high speed until the mixture is combined and has a uniform consistency. Stir in the orange zest until well blended.
  • In a large bowl, mix together the flour, baking soda, baking powder, cinnamon and salt. Add the wet ingredients to the dry and stir slowly with a whisk. Add the orange juice and milk and continue stirring gently until everything is combined and there are no lumps. Fold in the cranberries with a wooden spoon.
  • Spoon the batter into the prepared muffin cups, filling them to the top. If you like, you can decorate the muffins with one or two additional cranberries.
