Whether with cheese, hollandaise sauce or ham - the two classics can be combined in many ways and you should definitely take advantage of this while there is still fresh asparagus available. We will provide you with the necessary recipes for unique pancakes with asparagus.
Pancakes with asparagus – a tasty wrap with a difference
Our first recipe is an idea for pancakes with green asparagus, with the saucewith a hint of lemonis refined. The dish is prepared quickly and conveniently in the oven and is perfect if you want to prepare asparagus with pancakes gratin.
For 2 to 4 servings:
- 480 ml milk
- 1 large egg
- 60 g Mehl + 2 EL
- 24 green asparagus spears
For the sauce:
- 2 large egg yolks
- 1 tbsp melted butter
- 1 tbsp lemon juice
- 60ml water
- 1 pinch of salt or more to taste
- 1 Cayennepfeffer socket
- Paprika powder
Prepare the batter for the pancake by mixing the milk and egg and then adding the flour. Let the dough rest in the refrigerator for an hour.
Preheat the oven to 175 degrees and heat a greased pan over medium heat to cook as usual.prepare the crepes. The dough should be enough for 4 pieces. Place each finished cake on a rack to cool and grease the pan if necessary. Place 6 asparagus spears on each crepe and fold over both sides. Place the finished wraps in a greased baking or casserole dish to bake the asparagus with pancakes - 10 to 15 minutes should be enough.
In the meantime, you can prepare the sauce by whisking the egg yolks and water in a small saucepan. Then heat over low heat, stirring constantly, until the sauce thickens. Once the mixture stops dripping from the back of a spoon after dipping it and a thermometer reads at least 160 degrees, you can stir in the butter and then the lemon juice, salt and cayenne pepper. Before serving, pour the finished sauce over the pancakes with asparagus and sprinkle them with paprika powder.
Prepare hollandaise sauce
It goes well with white asparagusHollandaise is simply wonderful. So if you would like to prepare the pancakes with asparagus and hollandaise sauce, you can use the following recipe for the sauce:
- 225 g Butter
- 5 large egg yolks
- 1 tbsp lemon juice
- 2 tbsp water
- ½ tsp paprika powder
- Salt and pepper to taste
Melt the butter in a small saucepan over medium heat and meanwhile whisk the egg yolks with the lemon juice and water. Then add a tablespoon of butter to this mixture, stirring constantly. Repeat with a second tablespoon. Now add the egg mixture to the pot while stirring and continue to cook until the sauce thickens, about 3 to 4 minutes. The sauce burns very quickly, which is why you should always stir. Once the sauce thickens, season with paprika, salt and pepper and keep warm over low heat until ready to serve. If the hollandaise thickens further, you can thin it with a tablespoon or two of water.
Once your pancakes are filled with asparagus, you can pour the sauce over them.
Wild garlic pancakes with asparagus
Or how about white asparagus with pancakes? And not simple pancakes, but withdelicious wild garlic? This is another seasonal vegetable that you should definitely take advantage of.For this recipe you don't need the oven at all, but you do need to pre-cook the asparagus spears. For 4 servings you need the following ingredients and quantities:
- 125 g wild garlic
- 350 ml milk
- 3 Owner
- 225 g Flour
- pinch of salt
- Vegetable oil for frying
Remove the stems from the washed wild garlic and pat the leaves dry with kitchen paper. Roughly chop them with a knife and puree them finely with the milk in a food processor. Then mix the puree with the egg, flour and salt and let the finished dough rest for half an hour. It should have a more liquid consistency. If it is too thick, you can thin it with a little milk.
Heat a pan and grease it, then fry the pancakes in it as usual. However, to ensure that the pancakes retain their rich green color, you should not fry them for too long. Allow about a minute to a minute and a half for the first side and another half minute for the second side.
Cook asparagus
Depending on how you want to serve the wild garlic crepes, you will need one thick asparagus spear per crepe or as many thinner ones as you like. Then peel the sticks and remove the woody ends. Prepare a pot of salted and sweetened water and bring it to a boil. Then add the asparagus spears and cook them for about 10 minutes. Take them out of the water, let the moisture evaporate briefly and then wrap them with the finished wild garlic crepes.
Pancakes gratinated with asparagus, ham and cheese
If you would like to bake asparagus into pancakes, these delicacies are a wonderful idea. All you have to do is pre-cook white asparagus as described above (you don't need to pre-cook green asparagus) and prepare any egg tarts. Also cook the hollandaise sauce if you wish. Then place a slice of cooked ham on a pancake and wrap the desired amount of sticks in it (you can also dice them beforehand). Place the wraps in a baking dish, spread the sauce over them and sprinkle the whole thing with grated Parmesan. Bake the asparagus pancakes until golden brown, about 20 minutes.
