350g plain flour
100 ml extra virgin olive oil
100 ml dry white wine
1 tbsp roasted fennel seeds
1 EL Mohnsamen
1 tbsp white sesame seeds
1 tsp salt

Preparation:

Place the flour, olive oil, wine and salt in the food processor fitted with the dough hook. Mix the ingredients on low speed until the dough comes together well and is smooth. If the dough is a little dry, gradually add 2 tablespoons of water and continue mixing until the dough is smooth. Dust additional flour into a bowl. Place the dough in the bowl and let it rest at room temperature for 30 minutes. Preheat the oven to 200°C and line a large baking tray with baking paper. Divide the dough into 14 pieces (about 40g) and roll each piece into a thin log.

Fill a large, deep, heavy-bottomed nonstick skillet with 1 inch of water and bring to a boil. Reduce the heat and poach the sticks for 1 – 2 minutes on each side. Then remove them from the pan and place them on the prepared baking sheet. Sprinkle them immediately with fennel seeds, poppy seeds and sesame seeds so that the seeds stick to the dough. Bake the delicious breadsticks for 35 – 40 minutes or until golden. You can serve them with a dip of your choice.
