- 50 g olive oil
- 8 garlic cloves, minced

Recipes with vegetarian gnocchi – preparation
Gnocchi recipes: Heat the olive oil in a pan over low heat and fry the garlic for about 3 minutes. Increase the heat to medium and add the tomatoes, red pepper flakes and salt and fry for about 10 minutes until about half of the tomatoes are split. Then stir in the cream and pepper and turn the heat down a little.
Cook the gnocchi in salted water according to the package instructions and then reserve about 120 ml of the cooking water. Drain the gnocchi in the colander. Add the water and gnocchi to the tomatoes in the pan and fry for about 2 minutes, stirring constantly, until the sauce thickens. Distribute the burrata in the finished dish and the fresh basil on top. The quick dish is ready!
Homemade gnocchi made from sweet potatoes in garlic butter sauce
Since this recipe with gnocchiis vegetarian, it is the perfect choice for the evening because it is easy on the stomach and is quite easy to digest. In the recipe you will learn how you can make your own gnocchi from sweet potatoes. But if you're in a hurry, you can buy ready-made ones made from normal potatoes instead for all recipes with gnocchi. This is how the meal with gnocchi is prepared:
For the gnocchi (6-8 servings):
- a 450 g sweet potato
- 245 g ricotta made from whole milk
- 55 g Parmesan
- 1 1/2 tsp salt
- 125 g flour and extra for dusting the worktop
For the sauce and other ingredients:
- 200 g turnip stalks (stems, leaves and florets), chopped
- 8 THE BUTTER
- 55 g cream or sour cream
- 2 cloves of garlic
- 5-6 sage leaves
- 1 tsp sea salt
- 55 g Parmesan
Delicious recipes with gnocchi – Prepare the gnocchi
First prepare the sweet potato gnocchi. To do this, you prickthe sweet potatoseveral times with a fork and either bake them in the oven for about an hour or wrap them with damp kitchen paper and put them in the microwave for about 7 minutes. Put the flesh of the potato in a blender (you can discard the skin) and process it together with the ricotta, Parmesan and salt until almost smooth.
Put them in a bowl and, using a mixer fitted with a dough hook, work them together with the flour into a dough, adding the flour little by little. Then flour your worktop and knead the dough into a bread shape. Cut a thin slice on the narrower side and then shape it into a long, thin roll. Then cut this roll into pieces about 2.5 cm in size and collect them in a bowl. These are your homemade gnocchi, which you now just have to cook in salted water. Then drain them and mix them in a bowl with a little olive oil so that they don't stick to each other.
You can now process the finished gnocchi further or freeze it and use it at a later date as a gnocchi side dish or for other types of dishes and recipes with gnocchi.
Gnocchi pan recipe – prepare the sauce
Bring a pot of water to a boil while also preparing a bowl of ice water. Put the turnip stalk in the boiling water for a minute, then drain it briefly in a sieve and cool it briefly in ice water. This way you stop the cooking process. Then let the carrot stalk drain again in the sieve.
In the meantime, prepare the sauce. To do this, heat the butter in a pan over medium heat and add the gnocchi in batches to fry them until golden brown. Then add the turnip stalk, sage, garlic and salt and fry for a few more minutes. - 450 g Gnocchi
- 140 g Baby-Spinat
- 45 g Manchego

Cook the gnocchi according to the package instructions, but without salt or oil. Drain them and return them to the pot. Add the spinach, a small amount of cheese and 1 tablespoon of olive oil, stir everything together and leave the whole thing covered for 2 to 3 minutes so that the spinach begins to wilt slightly.

- 400 g Gnocchi
- 125g fresh spinach or other leafy vegetables
- 2 cloves of garlic, minced
- 1 small onion, chopped
- 1 small head of broccoli, chopped into small florets
- 50 g cheddar or blue cheese, cut into 1 cm cubes
- 1 tbsp butter or olive oil
- 2 EL Mehl
- 200 ml milk or cream
- 1/2 TL Dijonsenf
- 1 Prise Pfeffer
Preheat the oven to 200 degrees (180 degrees fan) and heat a pot of water and a pan on the stove in which you melt 1/2 teaspoon of butter. Sauté the garlic and onion for 3 minutes. Add the remaining butter and flour, stir well to remove any lumps and after about 30 seconds pour in the milk too. Then stir in the mustard and pepper and cook until the sauce thickens.
In the meantime, cook the gnocchi and broccoli florets in the prepared pot for 3 minutes, then drain them and add them to the pan. Add the spinach in portions as well as the cheddar and season with pepper and salt if necessary. Put everything in a baking pan, sprinkle grated cheddar over the dish and bake in the oven for 10 minutes until the cheese melts slightly. Serve with some chili flakes if desired.

For 4 servings:
- 450 g Gnocchi
- 3 tbsp olive oil
- 1 large chicken breast
- pepper and salt
- 1/4 teaspoon each dried thyme, basil and parsley

- 65 g mushrooms, sliced
- 2 tsp garlic, minced
- 120 ml chicken stock
- 70 ml Sahne
- 1 pinch of chili flakes
- 30g fresh spinach, chopped
- 55 g Parmesan, grated
Cook the gnocchi in unsalted water for 2 to 3 minutes, drain and rinse with cold water.Season the chicken breastswith the pepper, salt, thyme, basil and parsley, heat 2 tablespoons of olive oil in a pan and fry the meat for about 4 to 5 minutes until cooked through. Set it aside on a plate.
Add the remaining olive oil and butter to the pan and fry the mushrooms and garlic for one to two minutes. Now add the gnocchi, meat, broth, cream and chili flakes and, once the sauce is boiling, also the spinach. Season with salt and pepper, sprinkle with Parmesan and serve the delicious dish.

For 4 servings:
- 40 g butter and a little more for greasing
- 40 g Flour
- 2 teaspoons thyme, preferably fresh, but dried is also suitable
- 400 ml milk
- 100 g gruyere, grated
- 500 g Gnocchi
- 200 g cooked Brussels sprouts, heads halved
- 50g smoked salmon
- 25 g Parmesan, grated
Preheat the oven to 220 degrees (200 degrees fan). Melt the butter in a pan and fry the flour and thyme in it for about 2 minutes. Then gradually add the milk and cook until you get a thick sauce. Remove the pan from the heat, stir in the Gruyère and season the sauce.
Cook the gnocchi in salted water according to package instructions until they float to the surface and drain. Then mix these with the Brussels sprouts andthe salmonand pour the cheese sauce over it.
