  • 1 kg potatoes, floury and boiling
  • 150 grams of starch flour
  • 150 grams of wheat flour, type 00
  • 2 egg yolks
  • Salt and pepper

Preparation:

  • Wash the potatoes and cook with the skin on in boiling salted water for about 25 minutes until soft.
  • Drain, put back in the pot and let the remaining water evaporate with the stove on.
  • Then peel the potatoes and press them through a potato press into a large bowl while they are still hot. Alternatively, you can mash them with a potato masher.
  • Add the egg yolks and flour to the potatoes and quickly mix until smooth.
  • Season with salt, pepper and a pinch of nutmeg.
  • Place the dough on a floured work surface and form 3 finger-thick rolls.
  • Cut the rolls into pieces about 2 cm long and flatten them slightly with a fork.

  • 450 grams of gnocchi, homemade or from the store
  • 50 Gramm Butter
  • 1 tbsp olive oil
  • 3-4 sprigs of fresh sage
  • 60 grams of Parmesan, grated
  • Salt and pepper to taste

Preparation:

  • Cook the gnocchi in boiling water for 2-3 minutes and drain well.
  • Meanwhile, heat butter and sage leaves in a large skillet over medium-high heat.
  • Cook, stirring occasionally, until the butter browns slightly and has a slightly nutty smell - this will take about 2-3 minutes.
  • Transfer sage butter to a small bowl and add olive oil to the pan.
  • Add the gnocchi to the pan and fry for 3-4 minutes per side until golden brown.

  • Fresh basil

  • 1 tbsp olive oil

Preparation:

  • For the sweet potato gnocchi, prick the sweet potatoes several times with a fork and bake either in the oven for 50-60 minutes or in the microwave for 8-10 minutes.
  • Peel the sweet potatoes and mash them in a bowl with a potato masher.
