It's cherry season and we can't get enough of the little fruits. How do you bake the best sour cherry cake with streusel and custard? Can you also prepare Grandma's classic in the Thermomix?

Sour cherry cake with streusel and pudding

Ingredients
Shortcrust pastry and sprinkles:
- 500 grams of wheat flour
- 250 Gramm Butter
- 200 grams of granulated sugar
- 1 No
- 1 pack of vanilla sugar
- A pinch of salt
Cherry filling:
- 1 kg fresh cherries
- 2 packs of vanilla pudding powder
- 500 ml cherry juice or milk
- 100 grams of sugar
Frosting (optional):
- 200 grams of powdered sugar
- 2-3 tbsp lemon juice
preparation
- For the dough, cut the butter into small pieces and add all the quotations to the mixer and knead into crumbles. Alternatively, you could knead it by hand.
- Set aside about a third of the streusel and knead the rest into a dough.
- Wrap the dough in cling film and place in the fridge for 30 minutes.
- In the meantime, lightly grease a baking tray or springform pan with butter and line the bottom with baking paper.
- Preheat the oven to 180 degrees and roll out the dough thinly between 2 pieces of baking paper and place it in the springform pan. Raise a border.
- For the filling, wash and pit the cherries and roughly chop about 300 grams of them with a knife.
- Mix the vanilla pudding powder with 100 ml of cherry juice in a saucepan until smooth.
- Add the remaining cherry juice and 100 grams of sugar and bring to the boil briefly over medium heat, stirring constantly.
- Remove the pot from the heat, add the cherries and mix well.
- Spread the still hot filling over the dough and smooth it out.
- Sprinkle the streusel on top and bake for 40-45 minutes.
- If the streusel gets too dark, cover the cake with aluminum foil.
- Let the sour cherry cake cool, mix the ingredients for the icing until smooth and spread on top.
- And voilà – your sour cherry cake with sprinkles and pudding is ready!

Dough:
- 120 grams butter, at room temperature
- 150 grams of wheat flour
- 120 grams of sugar
- 50 grams of fine oat flakes
- 3 Owner
- 1 pack of vanilla sugar
- 1/2 pack of baking powder
- A pinch of salt
Sprinkles and filling:
- 60 grams butter, at room temperature
- 60 grams of sugar
- 100 grams of flour
- 1 teaspoon vanilla sugar
- 650 grams of cherries, pitted
preparation
- Preheat the oven to 180 degrees and line a springform pan with baking paper and grease the edge with butter.
- Place the ingredients for the crumble in the mixing bowl and mix for 6 seconds/speed setting 7. Transfer to a bowl.
- Put butter, sugar, flour, eggs, vanilla sugar, baking powder and salt in the mixing bowl and knead for 20 seconds/speed setting 4 to form a dough.
- Add the oat flakes and stir in reverse/15 seconds/speed 4.5.
- Pour the dough into the springform pan and spread the cherries on top.
- Cover with sprinkles and bake for 45-50 minutes.
- Allow to cool completely and sprinkle with powdered sugar if desired.
- And your sour cherry cake from the Thermomix is ready.
