Chinese variation with glass noodles
Ingredients for 4 servings:
- 200 g Glasnudeln
- 12 Mu-Err mushrooms
- 200g mushrooms, sliced
- 400 g minced meat
- 2 bunches of chives, cut into rolls
- 4 shallots, finely chopped into strips
- 4 chili peppers, cut into rings
- 8 tbsp fish sauce
- 2 tbsp sugar
- 8 tbsp lemon juice
- 4 tablespoons light oil, e.g. rapeseed oil
Soak the Mu-Err mushrooms in warm water for 20 minutes, then cut. At the same time, let the glass noodles soak in the boiled water, but only for 10 minutes. During this time, clean and cut the other ingredients. Briefly sauté all the mushrooms in a pan with a little oil and fry them with the minced meat. Mix in the shallots and chilies, add the glass noodles and cook for about 2 minutes. Whisk together the chives, sugar, fish sauce and sugar, pour over the remaining ingredients and mix well. The pasta salad is served lukewarm.
