A delicious, juicy cake with an intense scent of oranges goes just as well with afternoon coffee and tea. You can bake it as a gift and surprise friends or enjoy with family. You need the following ingredients:
- 2 medium organic oranges (about 600 g)
- 1 1/4 TL Natron
- 6 large eggs
- 150 g Allzweckmehl
- 500 g ground almonds
- 250g sugar
If you want to save yourself the endless peeling and chopping of fruit for fruit cake, then the next recipe from Spain is for you. Using whole oranges not only saves time and effort, but also contributes to the intense flavor of the dough. However, before you can start baking, you should prepare the bitterTaste of orange peelneutralize. The peel itself does not taste bitter, but the white skin contains bitter substances. Therefore, choose organic oranges with the thinnest possible peel and boil them. Proceed as follows:
Simple recipe for quick orange cake
1. First wash and peel the oranges. You cannot replace the oranges with orange juice, otherwise the dough consistency will be too runny. Use organic oranges and place them in a deep pot. Pour lukewarm water over them and boil them. Let them boil for about 10 minutes, drain the water, fill with cold water and repeat the process. You should boil the oranges a total of 3 times - that is, the fruits should simmer for a total of 30 minutes. Then refrigerate the fruit overnight and cut it into large pieces the next day. Remove the seeds. Leave them at room temperature for about half an hour before using them.
2. Preheat the oven to 180 degrees with fan. Grease a loaf tin or line it with baking paper.
3. Now you need to puree the oranges. To do this, put the fruit in a bowl and chop it up in a food processor or Thermomix and process it into an orange puree.
4. Add the ground almonds, all-purpose flour, eggs, baking soda and sugar to the bowl and mix the whole thing with a hand mixer.
5. Pour the dough into the baking pan and bake it for about 55 minutes until it turns golden brown (you can use a stick test).
6. Allow the cake to cool before turning it out. Cover it with baking paper and turn the baking pan over. Then carefully remove the kitchen mold.
7. Decorate the cake with fresh orange slices or edible flowers. Sprinkle it with powdered sugar.
8. Serve the cake with yogurt or vanilla ice cream. Store in an airtight container in the refrigerator for up to 5 days. But you can also freeze it - in this case the shelf life is 2 months.
Bake Spanish orange cake without flour
Alternatively, you can also bake the cake without flour. You need the following ingredients:
- 2 medium organic oranges, 400 g
- 5 small eggs
- 100 g butter, soft or 100 ml coconut oil
- 200g sugar
- 225 g almonds, ground
- 1 tsp water
- 1 teaspoon vanilla sugar
Preparation:
1. Wash, clean and boil the oranges (see instructions above). Remove from the pot and let cool in the refrigerator overnight. The next day, about half an hour before preparation, take it out of the fridge and cut it into rough pieces.
2. Puree the orange pieces finely and set aside.
3. Separate the eggs, put the whites in a bowl and beat with a hand mixer on the highest setting until foamy. Add about half of the sugar and continue to beat with the egg whites until stiff.
4. Place the butter and the rest of the sugar in another bowl and beat with the vanilla sugar and egg yolks until creamy (about 1 minute). Add the almonds and orange mixture and stir in.
5. Gradually add the egg whites to the orange mixture and mix the whole thing well.
6. Grease a loaf pan and bake for about an hour until the cake turns golden brown.
7. Remove the cake from the oven and let it cool. Then turn the cake out.
8. Decorate as desired with sugar infusion, powdered sugar, almonds or fresh oranges.
