Ingredients for baked apples:

  • 2 medium apples
  • 10-20 grams of brown sugar, depending on the sweetness of the apples
  • 1 tsp cinnamon
  • A pinch of ground cloves

Christmas tiramisu:

  • 100 grams of speculoos cookies
  • 2 egg yolks
  • 500 Gramm Mascarpone
  • 80 grams of granulated sugar
  • 20 ml dark rum
  • 1 TL Vanilleextrakt
  • Caramel sauce and dried apples for garnish

Preparation:

  • Peel the apples, core them and cut them into bite-sized pieces.
  • Put some water in a small pot and fry the apples for 3-4 minutes or until they become soft.
  • Then add brown sugar, cinnamon and cloves and simmer for 5-6 minutes, stirring constantly.
  • Remove from heat and allow to cool slightly.
  • For the speculoos layer, place the cookies in a small bag and roughly crush them with a rolling pin.

Ingredients:

  • 300 grams of chocolate gingerbread
  • 100 ml mulled wine or cherry juice for a non-alcoholic version
  • 400 Gramm Mascarpone
  • 200 grams of quark, 20% fat
  • 60 grams of powdered sugar
  • 1 pack of vanilla sugar
  • 1 teaspoon gingerbread spice
  • Cocoa powder for sprinkling

Preparation:

  • Roughly crumble the chocolate gingerbread with your hands.
  • For the cream, mix the powdered sugar, mascarpone, quark, vanilla sugar and gingerbread spice in a bowl with a hand mixer until smooth.

  • 260 ml water, divided
  • 30 ml dark rum
  • 30 ml Brandy
  • 30 ml coffee liqueur, such as Kahluà
  • 70 ml eggnog
  • 240 grams of whipped cream
  • 400 Gramm Mascarpone
  • 6 egg yolks
  • 30 Gramm Espressopulver
  • 90 grams of dark chocolate
  • 1 TL Vanilleextrakt
  • 1/2 tsp nutmeg

Eggnog Tiramisu Preparation:

  • Stir the egg yolks, rum, brandy, nutmeg, half the sugar and water in a metal bowl over a double boiler and simmer until the mixture has thickened (about 20-25 minutes).
  • Remove from the heat and gradually add the mascarpone and stir well.
  • Beat the whipped cream in a bowl for 4-5 minutes until stiff. Add vanilla extract and fold the mixture into the mascarpone cream.

  • For the berry compote, put all the ingredients except the cornstarch in a pot and heat and simmer over medium heat.
  • After about 10 minutes, mix the cornstarch with a little cold water and add it to the pot.
  • Simmer for another 5-6 minutes, stirring constantly, until the mixture thickens. Remove from heat and let cool.
  • For the cream, put all the ingredients in a bowl and stir until smooth.
  • Whisk together jam, marsala wine and orange juice in a bowl.
  • Dip the ladyfingers in it.
  • Spread some compote on the bottom of a baking dish and top with around 10-12 ladyfingers.
  • Then top with some compote and mascarpone cream and repeat the process a total of 3 times.

  • Gradually fold the mascarpone mixture into the whipped cream.
  • Mix espresso and brandy in a small bowl.
