- 1 large spring onion, chopped
- 80 ml milk
- 2 large eggs, smashed
- 1 1/2 teaspoons fresh sage, chopped

- 225g unsalted butter, melted
- 2 1/2 teaspoons kosher salt
- 1 1/4 TL Pfeffer
- 165 g pecan halves
- 70 g coarse breadcrumbs (preferably from sourdough)
- 55 g Parmigiano Reggiano
- fresh parsley, chopped
Preheat the oven to 175 degrees, line a baking tray with aluminum foil and spread the potatoes on it. Bake them until tender, about an hour and a half, then let them cool for 30 minutes. Now peel the sweet potatoes and discard the peel. Mix the potatoes with the onion, milk, eggs, sage, nutmeg and half of the melted butter as well as two teaspoons of the salt and one teaspoon of the pepper in a bowl with a fork and spread the mixture into a baking dish ( approx. 22 x 33 cm).
In another bowl, mix the remaining butter with the rest of the salt and pepper as well as the nuts, breadcrumbs and cheese and distribute everything over the potato mixture. Bake the casserole for about 30 minutes and then keep it warm in the oven at about 60 degrees. Sprinkle with parsley before serving.

Melt the butter in a saucepan and fry the garlic for a minute. Add the asparagus, season with salt and pepper and cook over medium heat for about 5 minutes. Now add the vegetable stock and cook the soup, covered, for 10 to 15 minutes, until the asparagus is soft but still green. Puree everything with a hand blender, stir in the cream and heat the soup again. If necessary, season with salt and pepper. - 1 medium apple, peeled and chopped very small
- 130g fresh or frozen cranberries
- 100g brown sugar
- 1-2 pinches kosher salt
- 1 tbsp cornstarch

- 2 tbsp unsalted butter

Preheat the oven to 220 degrees. Cook the apple pieces, cranberries, brown sugar and salt in a saucepan over medium heat for 8 minutes, until the apples soften and the berries burst. You should stir often. In a small bowl, mix the cornstarch with the water and add the mixture to the pot. Bring to a boil, stirring constantly, then cook for a minute until the sauce thickens. Then pour the sauce into a bowl and stir in the butter, vanilla extract and nutmeg.
Then let the sauce cool for about 20 minutes. During this time it should thicken even more. After the time is up, stir it a few times. Cut the puff pastry into small squares, put a little of the sauce on each square and seal them into bags. Bake until golden brown, about 14 to 16 minutes, and serve chilled.
