I like zucchini and I like waffles, so why not make zucchini waffles right away? I've already tried these and I have to admit: they taste incredibly delicious!
You can also prepare zucchini in a waffle iron! I discovered this a while ago and since then zucchini waffles have been one of my favorite recipes with the summer vegetables. So this hearty recipe is ideal if you're looking for a way toUse zucchini. It also comes together very quickly and can be served for breakfast, as a side dish or as an appetizer. And now for the recipe!
Ingredients for the waffles
- 2 medium zucchini, coarsely grated
- 120g grated cheddar
- 2 Owner
- 90 g grated Parmesan
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- approx. 60 g coconut flour (more if necessary)
- Oil for greasing the waffle iron
Preparation of the zucchini waffles with cheddar
As with any recipe using shredded zucchini, the first thing you should do is squeeze out any excess moisture from the vegetable. Since zucchini has a very high water content, this step is crucial so that the waffles come out crispy instead of soggy.
To do this, put the zucchini shavings in a sieve and sprinkle with a little salt. Allow to rest for between 10 and 30 minutes and then place the zucchini in a clean tea towel to wring out the moisture.
Whisk the eggs in a bowl and fold in the remaining ingredients except for the coconut flour. Add coconut flour a spoonful at a time until the waffle batter reaches a good, viscous consistency.
Preheat the waffle iron and grease it well.
Pour the batter into the waffle iron in portions and bake the zucchini waffles with cheddar cheese for about 5 to 10 minutes until golden brown.
The dough makes approx. 4 waffles.

More recipe ideas
- These zucchini waffles are gluten-free because the recipe uses coconut flour. If you wish, you can replace the coconut flour with regular flour or breadcrumbs, although in this case you will have to adjust the amount.
- Don't like cheddar that much? No problem! Replace it with Parmesan or other grated cheese of your choice. Bet on hard cheeses, among others, as they work best for this recipe.
