Ingredients for the crumble cake with plums

Make sure you use ripe plums, which give the cake just the right amount of sweetness and a unique, typically sour flavor. If you choose unripe plums that are too sour, you could spoil the dessert.

1.5 kg fresh plums

For the yeast dough:

  • 430 g Allzweckmehl
  • 80g sugar
  • 1 pinch of salt
  • 200 ml milk
  • 1/2 cube fresh yeast
  • 1 egg yolk
  • 80g butter, room temperature

For the sprinkles:

  • 160 g Flour
  • 80g sugar
  • 80 g butter, melted
  • 1 pinch of cinnamon
  • 1 packet of vanilla sugar

Prepare plum cake from the tray

Prepare yeast dough:

  • Place the flour, sugar and salt in a bowl and mix well.
  • Pour the milk into a small saucepan and warm slightly. But make sure that it is not hot under any circumstances.
  • Make sure your yeast isn't expired before you start. Stir the crumbled yeast into the milk until dissolved. Let it sit for 5 minutes to allow it to activate.
  • Add the milk mixture, softened butter and lightly beaten egg yolks to the flour mixture.
  • Using the dough hook of a mixer or food processor, knead the dough for as long as possible so that all the ingredients are well combined.
  • If the dough is too wet, add some flour. If it is too dry, add some milk.
  • Then put the yeast dough on the floured work surface and knead it by hand for a few minutes.
  • Form the dough into a ball and return it to the bowl. Cover with a clean towel and let the dough rise in a warm place until it has doubled in size, about an hour.
  • Line a baking tray with baking paper and roll the yeast dough onto it with a rolling pin. Cover the tray again with a cloth and let the dough rise for another 30 minutes.
  • While the dough is rising, preheat the oven to 200°C.

Prepare streusel:

  • Mix the flour, sugar, vanilla sugar and cinnamon in a bowl.
  • Add the melted butter and work the mixture by hand until crumbles form.

Prepare the plums:

First wash the plums, halve them and remove the seeds. Then cut the halves in half again.

Assemble the plum cake:

  • Distribute the pitted plums over the dough and sprinkle the streusel over them.
  • If you like, you can sprinkle the plum cake with almonds or other nuts such as chopped walnuts, pecans or hazelnuts before baking.
  • Bake the cake on the middle shelf for 30-35 minutes until the streusel is golden brown.
  • Let the cake cool for about 20 minutes before cutting.
