Super quick and super juicy - discover the simple recipe for a Brazilian carrot cake.
I love carrot cake! Regardless of whether the American variant with butter cream and walnuts or the classic rüklik hooks - they are always wonderfully juicy and never dry.
Did you know that there is a very own version of this cake in Brazil? I haven't until recently. But after trying it, I'm blown away. The Brazilian carrot cake comes from without grated carrots, but they are pureed - which gives the dough its great color. If you like, you can finally cover it with melted chocolate, but it just tastes really great with powdered sugar.
Recipe: Brazilian carrot cake (Bolo de Cenoura)
Ingredients:
- 2 large carrots
- 3 owner
- 3 The Butter
- 250 ml neutral oil (e.g. sunflower oil)
- 180 g of sugar
- 250 g Mehl
- 1 The backpulver
- 1 teaspoon salt
- Optional: powdered sugar or dark cake glaze
Preparation:
1. Preheat the oven to 180 ° C top/bottom heat. Line a baking sheet with baking paper.
2. Peel the carrots, cut into pieces. Then in a blender or kitchen machine (Like this from Amazon*) Puree the carrots, butter, eggs, oil and sugar at the highest level until a smooth mass is created. Pour them into a bowl.
3. Then stir in the flour, baking powder and salt. Put the finished dough on the baking sheet, smooth out and bake at 180 degrees for 20 to 25 minutes.
4. Let the cake cool well and sprinkle with powdered sugar or cover them with melted chocolate glaze. If you do it for Easter, you can use a few Easter decorations such as small chocolate eggs or marzipan cards (can be found here at Amazon, for example*) decorate.
