In winter, stews and soups are very popular with us! Now we need something that warms us from the inside out and simply makes us happy.
But would you rather be vegan?
How about a creamy chicken curry for a change? In this recipe, spices such as ginger, cayenne, curry and optionally chili ensure that the winter cold doesn't stand a chance.
Easy chicken curry recipe
Fresh rice or fluffy naan go best with this dish. By the way, you can find a very quick recipe for naan.
This is what you need for 4 servings:
- 700 g chicken breast fillet
- 20g fresh ginger
- 3 cloves of garlic
- 4 red onions
- 1 handful of spinach
- 200g Stage
- 1 can of coconut milk
- Some oil for frying
Spices:
- 1 teaspoon each of curry powder, turmeric, cayenne pepper
- 2 bay leaves
- 1 Brühwürfel
- Salt and pepper to taste
- Optional: chili flakes
This is how the curry works:
1. Peel ginger and finely dice or grate (There is a ginger grater on Amazon here*). Peel the garlic and pass it through a press. Fry both in a pot with a little oil at medium temperature, then set aside.
2. Peel and chop the onions. Cut the chicken breast into bite-sized pieces. Fry onions in the pot until they become translucent. Add the chicken breast and fry. Return the garlic and ginger to the pot.
3. Then season with bay leaves, curry powder, turmeric and cayenne pepper. Sweat briefly. Deglaze everything with cream and coconut milk. Add the bouillon cube and salt and pepper to taste. Bring to the boil briefly.
Tipp: If you want, you can also add chopped vegetables, such as carrots, peppers, snow peas or broccoli.
4. Meanwhile, rinse the spinach and then stir it in. Close the lid and simmer over low heat for 20 minutes. Fish out the bay leaves, then distribute them on plates and serve warm.
