This cake is absolutely guaranteed to be a success: when the craving for something sweet strikes, we simply conjure up a quick sizzling cake.
Sometimes you just want something sweet but don't have the time (or patience) to spend long in the kitchen. This is exactly what Prasselkuchen is ideal for. The classic GDR recipe uses a yeast dough. However, it is just as popular and much easier and quicker with ready-made puff pastry, apricot jam, crunchy sprinkles and a sweet layer of icing.
It's crispy, wonderfully uncomplicated and guaranteed to taste good to everyone - perfect for spontaneous coffee tables or just in between.
And the best thing: If you don't have apricot jam in the house, you can easily modify the recipe. For example, choose another jam that you like, like cherry, raspberry, or peach. If you're more of a chocolate fan, choose the nut nougat spread instead.

Recipe for crackling cake with puff pastry
Ingredients:
- 1 roll of puff pastry (from the refrigerated section)
- 3-4 tbsp apricot jam (or another jam of your choice)
For the sprinkles
- 300 g Flour
- 150g sugar
- 150 g kalte Butter
- 1 packet of vanilla sugar
For the icing
- 100g powdered sugar
- 2-3 tbsp water or lemon juice
Preparation:
1. Preheat the oven to 180 °C (top/bottom heat). Roll out the puff pastry onto a baking tray lined with baking paper.
2. Spread the apricot jam evenly over the puff pastry.
3. For the streusel, put the flour, sugar, butter and vanilla sugar in a bowl and work into streusel using your hands or a hand mixer (dough hook). Spread the sprinkles evenly over the jam layer.
4. Bake the cake in the preheated oven on the middle rack for about 15-20 minutes until the crumbles are golden brown.
5. Mix the powdered sugar with water or lemon juice until smooth. The icing should be thick but spreadable.
6. Let the cake cool slightly, then spread the icing generously over it using a spoon or brush. Instead of covering it with icing, you can just dust the cake with powdered sugar. Then cut the crackling cake into pieces and enjoy.
