Heavenly juicy muffins with Raffaello core-they make you addicted

Do you fancy a sinfully delicious dessert? Then trial our muffins with Raffaello core and white chocolate.

If you are a fan of white chocolate and Raffaello, you will love these muffins! The Raffaello muffins are nice and fluffy and taste incredibly tasty of coconut. Due to the melted chocolate pieces, the muffins are wonderfully juicy.

The Raffaello core is of course the absolute highlight and ensures a delicious crunch in the muffins. Believe me: Even the smell that spreads during baking makes the water run together in your mouth.

Raffaello muffins: simple recipe

Ingredients for 12 muffins:

  • LIVE 125 G
  • 80 g of sugar
  • 2 owner
  • 150 g natural yogurt
  • 100 g of coconut play
  • 2 tablespoons of white rasp chocolate
  • 250 g Mehl
  • 1/2 PCK. Baking powder
  • 12 Raffaellos
  • Coconut flashing for decorating
  • Optional: chocolate glaze

And this is how it works:

1.Oil in Give a bowl and beat foamy together with the sugar and eggs.

2.Now stir in the yogurt bit by bit and then add coconut and chocolate sockets. In the end, flour and baking powder are added. Mix everything well into a smooth dough.

3.Now laid out a baking sheet with a muffin shape or use a silicone muffin form. Put a spoon of the dough in each shape. Then place a Raffaello ball directly on the dough in the muffin form. Then cover the balls with another spoonful of dough.

4.Bake in the preheated oven at 180 ° C for 10-15 minutes. In between, check with a wooden stick whether the muffins are already finished. Do not leave them in the oven longer than necessary, otherwise they will become too dry at the end.

5.Let the muffins cool down after the baking time. Then you can either sprinkle them with coconut flaps or decorate them with a (white) chocolate glaze. Note that the muffins are quite cute. If you choose chocolate glaze, you can reduce the amount of sugar in the recipe.

Muffins with homemade coconut frosting pimpen

If you want to make an impression with your muffins, then decorate it with a coconut frosting. This is made from a few ingredients and is very easy. Here, too, the following applies: frosting makes the muffins sweeter again. If you don't like it as cute, reduces the sugar in the muffin recipe.

You need that:

  • 125 g white chocolate or couverture
  • 230 g Butter
  • 250 g powdered sugar
  • 1 TL Vanilleextrakt
  • 30 ml cream or milk

Melt chocolate and stir together with the butter, the powdered sugar, the vanilla extract and milk. Then put the mass in a piping bag and spread it on the muffins. To decorate, you can now sprinkle the muffins with coconut flaps. Also delicious: cut raffaess small or simply place on the frosting. Fruits such as raspberries or strawberries also go well with the Raffaello muffins.
