That's the thing with cinnamon stars. There are some that don't taste good at all. They are hard, dry and way too sugary. But then there are those that take us into another flavor universe. They are beautifully cinnamony, juicy, soft and melt wonderfully in the mouth.
Really good cinnamon stars are usually only available from the bakery or homemade by grandma. With our heavenly delicious recipe you can get them at least as good.
Ingredients for approx. 70 cinnamon stars:
- 300 g ground almonds + 100 g ground almonds for rolling out
- 270g powdered sugar
- 2 tsp cinnamon
- 3 egg whites
And this is how it works:
1. First beat the egg whites and powdered sugar into a creamy egg white mixture. Have a little patience with this. Since there is a large amount of sugar, it may take a little longer until the egg whites are firm enough. If you beat it too short, the glaze will be too runny and will run off the cinnamon stars.
2. From the finished whipped egg whitesLose about 110 gand set aside. Knead the remaining mixture with 300 g ground almonds and 2 teaspoons cinnamon. It's best to use your hands for this. The dough should be soft and just not stick to your hands. If it is too crumbly and dry, add a little more powdered sugar and beaten egg white mixture. If it is too sticky, you can add more ground almonds.
3. Roll out the finished cinnamon star dough thickly (about 7-8 mm) on a work surface sprinkled with ground almonds. If the dough is too thin, the Christmas cookies won't be as juicy later. Then spread with the remaining egg whites. Here is the rule: as much as necessary and as little as possible. If the glaze is too thick, it will later run over the edge of the cinnamon stars.
4. Then use a cinnamon star cutter (here on Amazon)* cut out the cookies and place them on a baking tray lined with baking paper. You can knead the leftover dough with the glaze and the ground almonds on the work surface into a dough again and again, roll it out, spread it with beaten egg whites and cut out cinnamon stars until it is used up.
Tipp:A conventional cookie cutter is only suitable to a limited extent for the cinnamon stars. Most of the time these are not high enough or the dough sticks to them. This doesn't happen with a special cinnamon star cutter. It is high enough and also has a clip-fold mechanism. The wings of the cutter open outwards, making it easier to remove the sticky dough from the tin. We also recommend briefly cleaning the mold in water after each cut out.
5. The Christmas cookies are now hereBake at 150 degrees for 13 to 18 minutes. The baking time can vary depending on the oven and the thickness of the cinnamon stars. It is important that you do not bake the cinnamon stars any hotter or for longer, because only the low temperature and the short baking time make them so wonderfully juicy and they do not dry out.
This means the cinnamon stars stay juicy for a long time
Let's be honest: the likelihood that your cinnamon stars will survive for long is very low. Because the delicious Christmas cookies are usually eaten in no time. If you still want to keep them, for example because you want to give them as a gift in the next few days, it is important to store them properly so that they do not become dry.
The first tip: Be sure to store the cinnamon stars in an airtight container. A biscuit tin is best (here on Amazon*). Additionally you can do a few morePlace apple slices in the tin. They release moisture into the Christmas cookies and ensure that the cinnamon stars stay nice and juicy. However, you should replace them regularly so that nothing goes bad.
