Ingredients for 20-24 cupcakes:
2 1/2 cups all-purpose flour
1 1/4 tsp baking powder
1 1/4 tsp ground cinnamon
1/2 tsp salt
1 1/2 cups granulated sugar
1/2 cup brown sugar
4 Owner
1 cup vegetable oil
1/2 cup sour cream
1 teaspoon vanilla sugar
3 Bags of shredded Karotten
1/2 cup chopped walnuts (optional)
Ingredients for the glaze:
1 package of cream cheese
1/2 cup butter, softened
4 cups powdered sugar
2 1/2 tsp vanilla extract
preparation:
1. Preheat oven to 180 degrees. Place muffin cups in the recesses of the baking tray and set aside.
2. Place the flour, baking powder, cinnamon and salt in a bowl. Set aside.
3. In a large bowl, beat the eggs for 2-3 minutes. Add sugar, oil, sour cream and vanilla and mix.
4. Slowly add to flour mixture and stir until combined. Add carrots and walnuts. To save time, you can chop the carrots in a blender.
5. Fill muffin paper cases with mixture until 2/3 full and bake for approximately 18 to 22 minutes, or until toothpick comes out clean. Remove and let cool.
6. For the icing, beat together the cream cheese and butter. Slowly mix together the powdered sugar and vanilla.
If you are lucky enough to discover such adorable silicone molds like these on the market, then you can totally implement this idea. Alternatively, you can use usual clay pots (diameter 7 cm), but only as a decoration for the cooled muffins. If you want to bake them in the oven, you need to keep them covered in a bowl of water for about 1-2 hours so that they don't burst from the heat afterwards. Then grease it, dust it with flour and cover the hole in the bottom with aluminum foil.

Rabbits are really scared and always try to hide somewhere when people come closer. That's exactly what these fun muffins represent. To decorate these bunny muffins you will need mini marshmallows for the tail, white sugar pearls or granulated sugar, white chocolate, pink sugar writing and white icing.
Dip a marshmallow in water and roll. Using melted white chocolate, draw small rabbit feet on baking paper and let dry. You must have 2 feet per 1 cupcake. Then turn over and paint the pads of the paws with pink sugar writing. Then press the rabbit feet and tails into the glaze.

Another great idea – decorate the muffins like sheep. If you made the bunnies from the previous recipe, you will already have mini marshmallows left over that you can use for these cuddly sheep. Have fun baking!
