Bake Frankfurter Kranz according to the original recipe with a sponge cake base under an aromatic vanilla cream

Original Frankfurt wreath recipe

The beautiful wreath shape combined with the delicious vanilla cream and candied cherriesand brittleresults in a dessert that not only tastes great, but is also pleasing to the eye. There is also the variant for a Frankfurt wreath made of sheet metal, but we prefer the classic one like thistypical for Germanyis.

These are the necessary ingredients:

For the sponge cake base:

  • 4 Owner
  • 4 tbsp cold water
  • 200g sugar
  • 80 g cornstarch
  • 120 g Flour
  • 1 tsp baking powder

For the vanilla cream:

  • 500 ml milk
  • 1 Pck. Vanillepuddingpulver
  • 250 g butter, room temperature
  • 50g sugar

To decorate:

  • 1 glass of tart jelly (e.g. from sour cherries)
  • 1 pc. Crispy
  • candied cherries

Frankfurter Kranz Original Recipe – This is how it’s done

Preheat the oven to 200 degrees (180 degrees fan) and grease and flour a wreath mold (26 cm).

Prepare the dough:

  • Separate the eggs.
  • First beat the egg whites with the water until foamy.
  • Gradually add the sugar while stirring.
  • Stir in the egg yolks.
  • Mix the dry ingredients.
  • Add them tablespoon by tablespoon to the wet mixture while stirring.
  • Spread the dough in the mold.
  • Bake the dough for the Frankfurter Kranz for about 25 minutes.

How to make the cream:

  • Prepare a pudding as usual using milk, sugar and pudding powder.
  • Let it cool, but stir regularly to prevent a skin from forming.
  • Beat the butter until creamy.
  • Fold the butter, tablespoon by spoonful, into the pudding at room temperature.

Layer and decorate the cake:

  • Cut the cooled base horizontally into three slices.
  • Spread the bottom base with the jelly.
  • Place the second layer on top and then spread some of the cream on top.
  • Put some of the remaining cream into a piping bag.
  • Place the third layer on the Frankfurter Kranz cake and spread with the remaining vanilla cream.
  • Sprinkle it with the brittle, add 8 to 12 cream tuffswith a star nozzleAdd (depending on the number of pieces you want) and place candied cherries on top.
