Creamy, delicious and wonderfully refreshing, this strawberry panna cotta tastes like summer and is great for a light dessert.

Ingredients for 6 servings:

  • 450 grams of fresh strawberries
  • 120 ml whole milk
  • 10 Gramm Gelatinepulver
  • 65 grams of granulated sugar
  • 350 ml Sahne
  • 1 TL Vanilleextrakt
  • A pinch of salt

Preparation:

  • Puree the fresh strawberries finely in the blender and then sieve through a sieve. Set the puree aside.
  • Pour milk into a medium-sized saucepan and spread the gelatin evenly over it. Let stand for 10 minutes.
  • Add the pureed strawberries, sugar and salt to the milk mixture and heat over medium heat for 3-4 minutes, stirring constantly.
  • Remove from heat and stir in vanilla extract. Let cool for 10 minutes, stirring occasionally.
  • Add whipped cream and mix well.
  • Divide the mixture into 6 small ramekins and cover with cling film.
  • Place the strawberry panna cotta in the refrigerator for at least 4 hours or overnight.
  • Remove from the molds and enjoy!

Have you ever eaten Eton Mess? If not, then it's time to change this. The dessert comes from England and is a combination of strawberries, strawberry sauce, whipped cream and meringue. Super easy to prepare and irresistibly delicious – we think an Eton Mess is one of the tastiest recipes with fresh strawberries!

Ingredients for 6 servings:

  • 2 large egg whites
  • 120 grams of powdered sugar
  • 450 ml Doppelrahm
  • 500 grams of fresh strawberries
  • 1 TL Vanilleextrakt

Eton Mess Preparation:

  • Preheat the oven to 120 degrees and line a baking tray with baking paper.
  • Beat the egg whites in a clean bowl with a hand mixer for 3-4 minutes until stiff.
  • Add the powdered sugar in portions and beat for another 4-5 minutes.
  • Place small blobs of the mixture on the baking paper and bake for about 1 hour. Allow to cool completely. If you don't want to make the meringues yourself, you can alternatively buy ready-made meringues from the store.
  • Finely puree 150 grams of the strawberries.
  • Beat the cream with 1 tablespoon of powdered sugar in a bowl with a hand mixer until stiff.
  • Chop the remaining strawberries finely.
  • Roughly crush about 3/4 of the meringues and add to the sauce with the chopped strawberries.
  • Now first divide the cream into glasses, pour the strawberry sauce over it and top with the remaining meringue pieces. And voilà – this is how you can make the Eton Mess recipe with fresh strawberries.

Strawberry filling:

  • 360 grams strawberries, chopped finely
  • 80ml water
  • 180 grams of whipped cream
  • 450 grams of cream cheese, softened
  • 180 grams of powder erythritol

Low carb chocolate ganache:

  • 80 grams of whipped cream
  • 50 grams of sugar-free chocolate

Preparation:

  • Line a springform pan with baking paper.

  • Beat the whipped cream and vanilla extract with a hand mixer for 2-3 minutes until stiff.
  • Mix cream cheese and powdered erythritol and add strawberry puree.
  • Fold in the whipped cream and spread it over the dough. Place in the refrigerator for 3-4 hours.
  • For the low carb ganache, bring the cream to the boil in a pot and remove from the heat.
  • Add the chocolate and powdered erythritol and let it rest briefly.
  • Cover the cheesecake with the ganache and chill for 20 minutes.
  • Cut into 16 pieces and your no-bake low carb strawberry cheesecake is ready!
