100 g finely chopped broccoli
100 g mashed potatoes
100 g chopped carrots
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons potato starch

125 g Flour
170ml water
1/8 teaspoon pepper
¼ teaspoon paprika
¼ teaspoon baking powder

Mozzarella cheese for the filling

Preparation time:
Air fryer: 180 degrees for 10 minutes (initially)

Preparation:

  1. Cook the broccoli for 2 minutes and then plunge into an ice bath.
  2. Then puree the blanched broccoli in a blender or chop finely with a knife.
  3. Boil the potatoes for the puree and mash them with a fork or potato masher.
  4. Finely grate the carrots or chop them in a blender.
  5. Place the prepared vegetables in a bowl and mix well with the Parmesan cheese, potato starch and salt and pepper.
  6. Cover with plastic wrap and place in the refrigerator for an hour.
  7. In another bowl, prepare the flour and water mixture. Mix spices, flour and water until a creamy mixture forms.
  8. Remove the vegetables from the refrigerator and form two tablespoons of the mixture into a ball.

Ingredients:
100 g carrots, grated
30 g onions, finely chopped
2 tablespoons olive oil
150 g oat flakes
70 g Cashewnüsse
300g cooked chickpeas
Juice of one lemon
2 tablespoons soy sauce
1 tablespoon flax flour
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1 tablespoon chopped parsley

Preparation:

  1. Briefly fry the carrots, onions and olive oil in a pan.
  2. In the meantime, add the oat flakes and cashews to the blender and process into a coarse flour.
  3. Remove the cashew-oatmeal mixture from the blender and place it in a large bowl.
  4. Add the chickpeas, parsley, lemon juice and soy sauce to the blender and puree until smooth.
  5. Add the chickpea puree to the cashew mixture. Add the fried carrots and onions.
  6. Add the remaining ingredients and mix well.
  7. Remove some of the mixture with a spoon and form into balls with wet hands.
  8. Place the vegetable balls in a single layer in the air fryer basket.
  9. Fry at 185ºC for 12 minutes until golden brown, turning once halfway through.
  10. Serve warm.
