Ingredients:
- 180 grams of wheat flour
- 170 grams butter, at room temperature
- 220 grams of sugar
- 4 Owner
- 150 ml mulled wine, red
- 50 grams of cocoa powder
- 30 ml Rapsöl
- 100 grams of dark chocolate
- 1 pack of vanilla sugar
- 1 tbsp cinnamon
- A pinch of cardamom
- 1 tsp baking powder
For the glaze:
- 150 grams of powdered sugar
- 60 ml mulled wine
Preparation:
- Preheat the oven to 180 degrees. Line a baking tray with baking paper or alternatively grease a Bundt cake tin with butter.
- Beat butter and sugar in a bowl for 3-4 minutes until fluffy.
- Add vanilla sugar and cinnamon and stir briefly.
- Gradually add eggs while stirring and process everything into a creamy mixture.
- Melt dark chocolate in a water bath or in the microwave.
- Add melted chocolate, rapeseed oil and mulled wine to the dough and mix everything well.
- Mix cocoa, wheat flour and baking powder and add to the mulled wine mixture. Stir into a smooth dough.
- Pour the dough into the baking pan or spread it evenly on the baking tray and bake for 45-50 minutes.
- Allow to cool and turn out of the mold.
- In the meantime, stir together the powdered sugar and mulled wine for the glaze until creamy.
- Drizzle the glaze over the cooled cake and voilà – your juicy mulled wine cake is ready from the tray!

- 1 tsp cinnamon
- A pinch each of cloves and nutmeg
- 1 THE Backpulver
- A pinch of salt
Frosting:
- 160 grams of powdered sugar
- 30 ml mulled wine
- A pinch of cinnamon
Preparation:
- Preheat the oven to 175 degrees and line a baking tray with baking paper.
- Mix wheat flour, sugar, cocoa powder, spices, vanilla sugar and baking powder in a bowl.
- Add mulled wine, applesauce, rapeseed oil and apple cider vinegar and mix everything into a smooth dough. Don't stir for too long, otherwise the dough will be too liquid.
- Spread the dough evenly on the baking tray and bake for 45-50 minutes. Allow to cool completely.
- Mix the icing ingredients until smooth and spread over the cake. And you have the perfect vegan mulled wine cake!
Juicy cake with mulled wine from the Thermomix

- 6 eggs, separated
- 150 grams of almonds or walnuts
- 80 ml mulled wine
- 20 grams of cocoa powder
- 1 tsp cinnamon
- 1 pack of baking powder
- A pinch of salt
Glaze:
- 200 grams of powdered sugar
- 40 ml mulled wine
Preparation:
- Preheat the oven to 180 degrees and lightly grease a loaf pan with butter.
- Place almonds in mixing bowl and grind for 10 seconds/speed setting 7. Transfer and rinse the mixing bowl.
- Attach the mixing attachment and add the egg white and salt to the mixing bowl. Beat for 2 minutes 30 seconds/speed 3.5 until stiff and pour in the egg whites.
- Remove the mixer attachment and add the egg yolks, butter and sugar to the mixing bowl. Stir until frothy for 1 minute 30 seconds/37 degrees/speed setting 5.

- 100 ml fruit tea
- 1 pack of vanilla sugar
- 1 teaspoon mulled wine spice
- 1 tsp cinnamon
- 1 THE Backpulver
- 100 grams of dark chocolate or chocolate sprinkles
- 30 grams of powdered sugar
Preparation:
- Bring the fruit tea and mulled wine spices to the boil and allow to cool.
- Preheat the oven to 200 degrees and line a loaf pan with baking paper.
- Beat the butter, sugar and vanilla sugar in a bowl with a hand mixer for 3-4 minutes until fluffy.
- Gradually add eggs.
- Mix the flour, baking powder and cinnamon in a bowl and add to the egg mixture with the chocolate sprinkles.
- Take around 20 ml of the fruit tea and add the rest to the bowl.
- Stir everything into a smooth dough and pour into the loaf pan.
- Bake for 50-55 minutes and let cool slightly.
- Mix fruit tea with powdered sugar and drizzle it over the cake. And voilà – your alcohol-free mulled wine cake is ready!

- 200 grams of speculoos cookies
- 60 grams butter, at room temperature
- 1 teaspoon gingerbread spice
Filling:
- 500 grams of low-fat quark
- 50 grams of cream
- 3 Owner
- 120 grams of sugar
- 30 grams butter, melted
- 1 tbsp wheat flour
- 1 tbsp lemon juice
- A pinch of salt
Mulled wine pouring:
- 250 ml mulled wine
- 1 pack of red cake icing
Preparation:
- Preheat the oven to 180 degrees and line a 26 centimeter diameter springform pan with baking paper.
- For the base, crumble the speculaas with a rolling pin and mix with the melted butter.
- Pour onto the base and press firmly with a spoon. Place in the refrigerator for 10 minutes.
- For the filling, separate the eggs and beat the egg whites with a little salt for 2-3 minutes until stiff.
- Beat egg yolks with sugar and lemon juice in a bowl for 3-4 minutes until fluffy.
- Add the quark, cream and butter to the egg yolk mixture and mix.
- Carefully fold in the egg whites and stir gently.
- Add flour little by little and mix everything together.
- Spread the filling on the base and bake for about 50-55 minutes.
- After the baking time, leave it in the switched off oven for another 5 minutes.
- For the icing, mix the cake icing with a little mulled wine.
- Heat the remaining mulled wine in a saucepan over medium heat and add the mixed cake glaze.
