The original recipe is prepared with white cabbage, but depending on the preferences, you can also use other types of cabbage. How about, for example, a Greek herb salad with pointed cabbage?
Ingredients for 4-6 Portions:
- 1 medium -sized head white cabbage
- 250 ml herbal vinegar or white wine vinegar
- 3 shallots or 2 onions
- 100 grams of crystal sugar
- 200 ml of native olive oil extra
- 500 ml of mineral water with carbon dioxide
- Salt and pepper
preparation
- Halve the white cabbage and remove the stalk.
- Grate the cabbage either finely with a vegetable slicer or cut into very thin strips.
- Chop the onions very small and mix with the cabbage in a large salad bowl.
- Put the vinegar, olive oil, mineral water and sugar in a bowl and season with salt and pepper.
- Stir until the sugar has completely dissolved.
- Put the mixture in the bowl to the cabbage and mix well.
- Cover everything with a smaller lid and then weigh the lid with a little so that the white cabbage mixture is pressed off.
- Finally, put the Greek herb salad in the fridge and let it steep for at least 12 hours.
