Beautifully creamy, super light and full of flavor – this kohlrabi apple soup is ideal for a quick and light summer dinner.

Ingredients for 4 servings:

  • 600 grams of kohlrabi
  • 300 grams of tart apples
  • 1 medium onion, diced small
  • 2 tbsp olive oil
  • 1 liter vegetable broth
  • 15 grams of spelled flour
  • 90 grams of cream
  • 40 grams of walnuts or other nuts of your choice
  • Salt and pepper to taste

Preparation:

  • Wash the kohlrabi, cut off the leaves and set aside.
  • Peel kohlrabi and cut into bite-sized pieces.
  • Peel, quarter, core and roughly dice apples.
  • Heat olive oil in a large pot over medium heat and sauté onions for 2-3 minutes.
  • Add the kohlrabi and apple pieces to the pot and fry for 1-2 minutes.
  • Pour in the spelled flour and vegetable stock and bring to the boil.
  • Reduce heat and simmer covered for 20-25 minutes.
  • In the meantime, roast the nuts in a pan without fat for 5 minutes until golden brown and crispy.
  • Beat the cream until stiff with a hand mixer.
  • Puree the soup in a blender or with a hand blender and season with salt and pepper.

Sauce:

  • 200 ml milk
  • 250 grams of cream
  • 20 grams of flour
  • Some lemon juice
  • Salt and pepper

Preparation:

  • Clean and peel kohlrabi.
  • Hollow out carefully with a knife.
  • For the filling, prepare the rice according to the package instructions.
  • Mix the rice, ground beef and onions in a bowl and season with paprika, salt and pepper.
  • Stuff kohlrabi with the mixture.
  • To make the sauce, heat the flour with a little oil in a large pot and add milk and cream, stirring constantly.
  • Add the stuffed kohlrabi to the pot and cover and simmer over low heat for 30-35 minutes.

Ingredients for 3 servings:

  • 350 grams of kohlrabi
  • 100 grams of almond flour
  • 80 grams of Parmesan, grated
  • 1 No
  • Salt and pepper to taste

Preparation:

  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Peel the kohlrabi and remove the woody parts.
  • Cut into thin strips and pat dry with kitchen paper.
  • Mix the parmesan and almond flour in a bowl and beat the egg with salt in a separate bowl.
  • Roll the kohlrabi pieces first in the egg and then in the breading.

  • 2 Kohlrabi
  • 200 grams of breadcrumbs
  • 200 grams of flour
  • 200 ml coconut milk, unsweetened
  • 1 small bunch each of fresh chives and dill
  • A shot of mineral water
  • 1 TL Curry
  • Salt and pepper to taste

Preparation:

  • Peel the kohlrabi and cut it into slices about 0.5 cm thick.
  • Bring water to the boil and blanch kohlrabi for 5 minutes.
  • Mix herbs, coconut milk and water in a bowl and stir into a dough.
  • Place the flour and breadcrumbs in 2 plates and first coat the kohlrabi cutlets in the flour, then in the milk and finally in the breadcrumbs.
  • Either fry the kohlrabi cutlets in a pan with a little oil until golden brown or bake them in the oven at 180 degrees for 25 minutes.
