Ingredients for 2 servings

  • 120 grams of whole wheat flour
  • 180 grams of pumpkin puree, without added sugar or preferably homemade
  • 180 ml unsweetened almond milk
  • 1 No
  • 30 grams of maple syrup
  • 15 ml coconut oil
  • 1 tsp baking powder
  • 1 TL Vanilleextrakt
  • 1 teaspoon each cinnamon and star anise
  • A pinch of salt

preparation

  • Heat the waffle iron.
  • Place pumpkin puree, maple syrup, almond milk, egg, coconut oil and vanilla extract in a large bowl and whisk together.
  • Mix dry ingredients in a separate bowl and gradually add to pumpkin mixture.
  • Lightly spray the waffle iron with cooking spray, place the batter in it and prepare according to the manufacturer's instructions.
  • Garnish with toppings of your choice and voilá – your sweet pumpkin waffles without sugar are ready!

  • 250 grams of whole wheat flour

  • 50 grams of brown sugar

  • 20 grams coconut oil, melted

  • 1 tsp baking powder
  • 1 teaspoon each cinnamon and star anise, alternatively pumpkin spice

  • Preheat waffle iron.
  • Mix pumpkin puree, coconut oil, soy milk and vanilla extract in a large bowl with a whisk.
  • Mix dry ingredients in a separate bowl and gradually add to the pumpkin mixture.
  • Stir into a smooth dough.
  • Lightly coat waffle iron with cooking spray or coconut oil.
  • Pour the batter into the waffle iron in portions and bake for 3-5 minutes until golden brown and crispy.
  • Garnish the pumpkin waffles with maple syrup and nuts and enjoy warm.

Chocolate pumpkin waffles

Ingredients for 10 waffles

  • 400 grams of whole wheat flour
  • 250 grams pumpkin, peeled and cut into pieces

  • 300 ml milk
  • 30 grams of cocoa powder
  • 120 grams of butter or coconut oil
  • 1 tsp cinnamon

preparation

  • Place pumpkin, dates and milk in a saucepan and bring to a boil over medium heat.
  • Reduce heat and cook with the lid closed for about 15-18 minutes until the pumpkin becomes soft.
  • In the meantime, put the eggs, butter, coconut oil, wholemeal flour, cocoa and cinnamon in the mixer and process until smooth.
  • Heat the waffle iron and brush lightly with coconut oil.
  • Pour the pumpkin mixture into the blender and puree everything into a smooth, liquid batter.
  • Bake the dough in batches for about 4-5 minutes.

  • 260 grams of wheat or wholemeal flour

preparation

  • Place pumpkin flesh in mixing bowl and chop for 5 seconds/speed setting 5.
  • Transfer pumpkin and set aside.

  • Add the mineral water, cream, pumpkin and flour to the mixing bowl and mix for 90 seconds/speed setting 4.
