Poffertjes recipe: This is how delicious and easy you can prepare Dutch pancakes!

It's the holidays and a delicious breakfast ensures that we start the day in a good mood. And what could be better than fluffy pancakes? Sometimes with fresh fruit, peanut butter, savory, American pancakes or crepes - there are many recipes for pancakes and they all taste wonderful. But if you've ever been on holiday in Holland during the Christmas season, you've definitely eaten them - little Poffertjes! Served with plenty of powdered sugar and butter, the airy pastry creates a real taste explosion and tastes indescribably good. Luckily, you don't have to go to Amsterdam to enjoy its fine delicacies. After we tried the very best Poffertjes recipe ourselves and found it to be good, we knew that we should share it with you straight away. But enough talk – read on and enjoy your meal!

Was since Poffertjes?

We have roasted almonds and lots of Christmas cookies and the Dutch have Poffertjes! Beautifully fluffy, crispy on the outside and really delicious - Poffertjes are a delicious street food from the Netherlands and you can find them especially at Christmas markets or folk festivals. To prepare the Dutch specialty, a yeast dough is usually used and the small pancakes are baked in a special cast iron pan (Poffertjespan). The taste of the Poffertjes recipe reminds us of a mixture of donuts and pancakes and is therefore ideal fora festive breakfastor New Year's Eve appetizers.

And of course we start with the classic Dutch style Poffertjes recipe! Normally you use a mixture of whole grain buckwheat flour and wheat flour, but if you don't have buckwheat flour, you can just use wheat flour. Serve these like you would at the Christmas market with lots of powdered sugar and extra butter and enjoy!

Ingredients for 80-90 pieces:

  • 125 grams of wheat flour type 405
  • 125 grams of whole grain buckwheat flour
  • 25 butter, melted and slightly cooled
  • 370 ml milk
  • 1 egg, lightly beaten
  • 1 pack of dry yeast
  • 20 grams of sugar
  • A pinch of salt

Preparation:

  • Heat milk to lukewarm in a small saucepan over medium heat.
  • Whisk together both types of flour, sugar, dry yeast and salt in a large bowl.
  • Add the butter and egg and gradually add the milk using a hand mixer.
  • Stir the mixture for 2-3 minutes to form a smooth, thin dough.
  • Wrap the dough with cling film, cover with a cloth and let it rise in a warm place for 1 hour.
  • Heat the poffertjes pan and grease it with a little butter or oil.
  • Use a tablespoon to fill the dough into the hollows, but do not overfill them.
  • Bake the poffertjes for 2-3 minutes until small bubbles form on the surface, carefully lift and turn.
  • Bake for another 1-2 minutes and remove from the pan.
  • Continue like this with the remaining dough, greasing again every now and then.
  • Sprinkle with plenty of powdered sugar, melt some butter on top and voilà - that's the best poffertjes recipe for us!

Recipe for poffertjes from the pan

Don't have a special poffertjes pan? No problem! Luckily, you can also prepare the mini pancakes in a normal non-stick pan. And another little surprise – these poffertjes are baked without yeast!

Ingredients:

  • 250 grams of wheat flour or a mixture of wheat and buckwheat flour in a 1:1 ratio
  • 150 ml milk
  • 75 grams butter, melted
  • 3 Owner
  • 60 grams of sugar
  • 1 THE Backpulver
  • 1 pack of vanilla sugar
  • 40 ml
  • 300 grams frozen berries, thawed

Preparation:

  • Beat eggs, 50 grams of sugar and vanilla sugar in a large bowl with a hand mixer for 2-3 minutes.
  • Add 200 grams of flour and milk alternately.
  • Cover the dough and let it swell for 15 minutes.
  • Add baking powder and remaining flour and mix everything into a smooth dough.
  • Heat oil in a non-stick pan over medium heat and use a teaspoon to add small heaps to the pan.
  • Bake for 2-3 minutes until small bubbles form and turn.
  • Bake for another 2-3 minutes until lightly golden brown.
  • Puree the berries finely with the hand blender.
  • Drizzle the pancakes with melted butter, sprinkle with powdered sugar and serve with the berry sauce.
  • And that's it - it's so easy to prepare poffertjes in the pan!

Poffertjes Recipe vegan

We also have a suitable vegan poffertjes recipe for those of you who don't consume animal products! Nice and fluffy on the inside, really crispy on the outside and irresistibly delicious – a real dream!

Ingredients:

  • 250 grams of flour
  • 15 grams of soy flour
  • 40ml water
  • 150 ml almond milk
  • 70 gram vegan margarine
  • 50 grams of sugar
  • 5 grams of dry yeast
  • 1 THE Backpulver
  • A pinch of salt
  • oil for baking

Preparation:

  • Mix the soy flour and water well in a small bowl, heat in the microwave for 30 seconds and let it steep for 5 minutes.
  • Whisk together flour, baking powder, yeast and salt in a large bowl.
  • Beat the margarine and sugar in a separate bowl with a hand mixer for 2-3 minutes until creamy.
  • Add almond milk and stir.
  • Fold in the flour mixture and soy flour, stirring occasionally, and mix to form a smooth dough.
  • Cover and let the dough rest in a warm place for 30 minutes.
  • Heat a cast iron pan over medium heat or a poffertjes pan and grease it with a little oil.
  • Add the dough spoon by spoon and bake for 1-2 minutes.
  • Turn carefully and bake for another 1-2 minutes.
  • Drizzle the vegan poffertjes with powdered sugar or berry sauce and enjoy warm!

Prepare hearty poffertjes

Although we would probably never understand it, there are people who aren't that into sweets. In this case we will prepare hearty Poffertjes, which can be enjoyed both for breakfast and as a...little New Year's Eve snackstaste wonderful.

Ingredients:

  • 500 grams of type 550 wheat flour
  • 4 eggs, separated
  • 500 ml milk
  • 50 grams butter, melted
  • 1 tsp baking powder
  • 10 grams of sugar
  • 1 glass sun-dried tomatoes in oil, chopped into small pieces
  • A pinch of salt
  • 100 grams of Parmesan, grated

Preparation:

  • Whisk together flour, baking powder, sugar and salt in a bowl.
  • Mix butter, milk and egg yolks in a separate bowl and gradually add the flour mixture.
  • Beat the egg whites in a bowl with a hand mixer until stiff and fold them into the flour mixture in portions.
  • Add parmesan and sun-dried tomatoes and mix well.
  • Heat a non-stick pan over medium heat and grease with butter.
  • Pour 1-2 tablespoons of the dough into the pan and bake for 2-3 minutes.
  • Flip and cook for another 1-2 minutes until golden brown.
  • And your hearty poffertjes are ready!
