Make your own quince bread with rosemary and ginger – the alternative to banana bread

For this recipe you first need to cook (poach) the quinces, after which you can make the quince bread yourself. The ginger gives the bread that certain something and goes wonderfully with the sweetness of the quince and the aroma of the rosemary. With quince bread with ginger you are making a wonderful choice! You need the following ingredients:

Bake your own quince bread – poach the quince

  • 150g sugar
  • 1 Lorbeerblatt
  • 1 star anise
  • 1 TL Vanilleextrakt
  • grated zest and juice of one lemon
  • 2 EL Honig
  • 1 liter of water
  • 1 kg large quinces (4 pieces)

Preheat the oven to 120 degrees. Quarter and core the peeled quinces. Put all the ingredients except the fruit in an ovenproof pot with a lid and cook everything on the stove for 5 to 8 minutes. Remove the container from the heat and add the quinces, cover with baking paper and then the lid. Place the pot in the oven, reduce the heat to 100 degrees and cook for about 4 hours. Letthe compotecool. You will need four quarters if you make the quince bread yourself. You can seal the rest in suitable containers (fruits and juiceseparately) and store in the refrigerator for up to 2 weeks.

  • 150 g soft butter
  • 40 g raw sugar (brown sugar)

  • 1 TL Vanilleextrakt
  • ½ TL gemahlenes Cardamom
  • 1 tbsp freshly grated ginger
  • 1 tbsp fresh, chopped rosemary leaves
  • 140 g rye flour
  • 60 g Mandelmehl
  • 60 g almond slivers or almond flakes
  • 1 ½ tsp baking powder
  • pinch of salt
  • 1 poached quince (4 quarters)
  • Raw sugar for sprinkling
  • Rosemary leaves for sprinkling

If you would like to make the quince bread yourself, preheat the oven to 180 degrees. Mix the butter and sugar until a white, fluffy mixture forms. Then gradually add the eggs, vanilla extract, cardamom and ginger and continue mixing until well combined, about 2 to 3 minutes. Then add the flour, rosemary, almond ingredients, baking powder and salt and mix by hand with a wooden spoon until the ingredients are well combined, being careful not to overmix the dough.

Grease two small (15.5 cm x 9 cm) or one large loaf tin (21 cm x 11 cm) and distribute the dough evenly in them. Cut the quince quarters into three wedges each, cover the dough with them and sprinkle with sugar and rosemary leaves. Bake for 50 to 60 minutes – the dough should start to brown around the edges and when tested with a toothpick, the skewer should come out dry. Then pour the liquid through a sieve and collect it. Save the fruit pieces too. Core them, chop them up and add them to the quince water to puree everything. Weigh the mixture and add the same amount of preserving sugar. Cook everything with the preserving sugar while stirring until a thick mixture forms.

Line a baking tray with baking paper and spread the mixture over it. You decide for yourself how thick you want it to be.
