Ingredients
For the batter:
- 225g cake flour
- 1 1/2 tsp baking powder
- 1/4 TL Natron
- 1/4 tsp salt
- 150 g granulated sugar
- 120 ml vegetable oil (e.g. rapeseed oil)
- 2 eggs, size L
- 120 ml freshly squeezed orange juice
- The grated peel of 3-4 oranges
For the glaze:
- 130g powdered sugar
- 3-4 tbsp orange juice
preparation
1. Preheat the oven to 175 °C and line a loaf tin with baking paper. Use two overlapping pieces of baking paper to make it easier to remove the finished cake from the pan.
2. Sift the dry ingredients (flour, salt, baking powder and baking soda), mix in a bowl and set aside.
3. Mix the oil and sugar in the bowl of a food processor or with a hand mixer until the sugar dissolves.
4. Add the eggs one at a time, mixing for 1 minute after each addition.
5. Add orange peel and mix for another 30 seconds.
6. Add the dry ingredients alternately with the orange juice in two batches and mix on medium-low speed until well combined. Don't mix too much.
7. Pour the batter into the baking paper-lined loaf pan and bake on the middle rack of the oven for 45-55 minutes, until the surface is golden brown and a skewer comes out clean from the center.
8. Allow the orange cake to cool in the tin for 5-10 minutes, then transfer to a wire rack to cool completely before frosting.
9. For the glaze, sift the powdered sugar and mix with 3-4 tablespoons of orange juice until the desired consistency is reached. Add more juice for a runnier glaze and more powdered sugar for a thicker one.
10. Drizzle the glaze over the cake once it has completely cooled. Decorate with more grated orange peel or whole orange slices.
11. Serve the cake with coffee or tea or store in a sealed container for up to 3 days.
Soaked orange cake: This makes it really juicy!
To make your orange cake even juicier, you can soak it in a syrup. To do this, prepare a classic sugar syrup, but instead of water, use orange juice. You then pour the cooled syrup over the still warm cake and it is soaked with it. The result? An incrediblejuicy cake, which melts in your mouth.
Ingredients for the orange syrup:
- 60 ml freshly squeezed orange juice
- 50 g granulated sugar
While the cake is baking, prepare the syrup by heating the orange juice and sugar in a saucepan for a few minutes until the consistency is slightly thick and syrupy.
Once the orange cake is ready, let it cool in the pan for 10 minutes. Then turn out onto a wire rack with a baking sheet underneath to catch the syrup and glaze.
Poke a few holes in the cake, pour the syrup over it and smooth it out so that it is evenly distributed.
Then let the cake cool completely before drizzling it with the orange glaze.
If you wish, you can also prepare and enjoy the cake without icing.
