Bake apple cake with mascarpone and pudding

The apple pie in all its variations is without question one of the most popular desserts, and not just in autumn. You need these ingredients for the heavenly apple pie

  • 150 g Flour
  • 75g powdered sugar
  • 2 pinches of salt, separated
  • 1 heaped teaspoon of baking powder
  • 7 medium eggs
  • 75 g clarified butter (or regular butter)
  • 1 apple
  • 4 tbsp lemon juice
  • 750 g Mascarpone
  • 200g Greek yogurt
  • 2 packs of vanilla sugar
  • 150g sugar
  • 1 ½ Pck. Vanillepuddingpulver
  • 100 g raspberries (optional)
  • 3 EL Gelee

Prepare the dough for the apple pie with mascarpone and pudding

Grease a springform pan with a diameter of 26 cm.

  • Prepare the dough by first mixing the flour with the salt and baking powder and then adding an egg and the clarified butter (or butter) in pieces.
  • To knead, first use the hand mixer with the dough hook to roughly knead everything. Then continue kneading with your hands.
  • Let the finished dough rest in the refrigerator for half an hour.

  • After washing the apples, dry them well.
  • Peel them if you like, quarter them and remove the core.
  • Cut the apple quarters into thin slices and drizzle with a tablespoon of the lemon juice to prevent browning.
  • Preheat the oven to 175 degrees.
  • For the mascarpone creammix the mascarponeMix , yogurt, vanilla sugar, 1 pinch of salt, 6 eggs, sugar and 3 tablespoons of lemon juice.
  • Stir in the pudding powder.
  • Pour the cream into the baking pan.

Bake the cake and decorate with apples

  • Bake the apple cake with vanilla pudding powder and mascarpone for 25 minutes.
  • Take the cake out of the oven and arrange the apple slices in a ring, preferably starting from the outside. If you want to use raspberries, leave a circle in the middle on which you can later arrange the raspberries.
  • Place the apple tart with custard and mascarpone cream back in the oven and bake for another 15 minutes.
  • Turn off the oven, but let the cake sit in there for another hour. This way the apples stay juicier.
  • Then remove to the oven and allow to cool before removing the baking pan.

Final steps for the apple custard cake

  • Distribute the raspberries in the center of the cake.
  • Heat the jelly in a saucepan over low heat until liquid.
