Ingredients for 6 servings

Apple layer:

  • 500 grams of apples
  • 50 Gramm Butter
  • 70 grams of brown sugar
  • 40 ml apple juice, no added sugar
  • 1 tsp cinnamon
  • 1 TL Vanilleextrakt

Mascarpone-Creme:

  • 300 Gramm Mascarpone
  • 200 grams of low-fat quark
  • 100 grams of amarettini or ladyfingers
  • 40 grams of brown sugar
  • 1 TL Vanilleextrakt

preparation

  • For the apple layer, peel the apples, core them and cut them into small cubes.
  • Place sugar, butter, cinnamon and vanilla extract in a small saucepan and simmer briefly over medium heat without stirring.
  • When the sugar is slightly caramelized, add the apple pieces and apple juice to the pot.
  • Let simmer for about 5 minutes, stirring occasionally. The apple pieces should be soft but not too mushy.
  • Then remove the apple pieces from the pot using a sieve ladle and place them in a small bowl.
  • Simmer the sauce for another 5 minutes until the mixture has thickened.
  • Then add the apples again, simmer for 2-3 minutes and remove the pot from the heat.
  • Mix all the ingredients for the mascarpone cream in a bowl with a whisk until smooth.
  • Finally, add about 1 tablespoon of apple pieces to the glasses and crumble the amarettini or ladyfingers over them.
  • Then spread 1-2 tablespoons of cream over it and smooth it out.
  • Repeat the above step again and finish with apple pieces.
