Recipe for cakes with blackberry jam, sour cream and almonds

So many delicious berries have or soon have their season and seduce us to prepare a wide variety of treats. From August to October it is mainly the blackberries in the garden that want to be used or preserved. How about a cake for which you use homemade jam?

For the cake with blackberry jam, you can of course also use bought berries or jam purchased immediately if you do not have a garden or don't feel like cooking. Either way, the blackberry cake with almond leaves becomes a real treat from which you will not get enough.

What ingredients you need for the cake with blackberry jam

You don't need any special ingredients. Most of them probably even have them at home, so that they can also spontaneously prepare the recipe if they suddenly feel like a delicious dessert or unexpectedly visit.

For the cake:

  • 115 g melted butter
  • 150 g of sugar
  • 1 tbsp vanilla extract
  • ½ teaspoon kosher salt
  • 2 TL baking powder
  • 2 large eggs, room temperature
  • 220 g Mehl
  • 120 ml milk
  • 60 g sour cream, room temperature

If you want to make jam yourself:

  • 200 g blackberries (fresh or TK)
  • 1 The Honig
  • 1 tablespoon of fresh -pressed lemon juice

To top:

  • 40 g almond leaves
  • 2 tablespoons of sugar
  • Optionally fresh blackberries

How to cook the blackberry jam

  • Put the three ingredients in a saucepan and heat them.
  • As soon as the mixture is warm, roughen the fruits with a fork or a spoon.
  • Cook the jam for 3 minutes with constant stirring.
  • Take it from the cooking site and let them cool down.

Prepare the cake dough

Heat the oven to 175 degrees.
Grease a spring or other round baking pan (Ø 22 cm). Place baking paper and grease it too.

  • Mix the butter creamy with the sugar.
  • Stir in vanilla, salt and baking powder.
  • Whisk the eggs.
  • Stir half of the flour and then the milk and the sour cream.
  • Add the remaining flour.
  • Put the finished dough in the springform pan.
  • Put the blackberry jam on the dough everywhere.
  • Then spread them roughly with a spoon, but do not mix the dough and jam too much.
  • Sprinkle the almonds and then the sugar over it.
  • Bake the cake with blackberry jam for about 30 minutes until the edges turn golden brown.
  • Take the shape out of the oven and let the cake cool at least 10 minutes before taking it out of the mold.
  • The blackberry cake should cool completely before serving. You can now also decorate it with a few fresh blackberries.

Notes on baking and storing

  • You can also use a springform pan with a diameter of 20 cm. In this case, however, you have to calculate up to 10 minutes more baking time because the dough is thicker.
  • Would you like to have a blackberry cake from the sheet? It is best to choose a model with the dimensions 20 x 20 cm. In this case, the baking time remains the same as in the recipe above.
  • The cake can be stored in the fridge for up to 5 days as long as it is airtight.
