The blackberry bushes are bursting with juicy fruit and it's time to process the blackberries. But how? What could you make with these delicious berries? Well, in addition to the classic blackberry jam and compote, treats such as liqueurs, cakes and even savory dishes are also possible. We have put together a selection of variations for you so that you can make the most of the rich harvest. The following blackberry recipes will be enjoyed by the whole family!
Make your own blackberry juice
Probably the easiest and quickest idea for processing the wild berries is juice or compote. First you need to wash the blackberries. You can then get juice using a juicer, into which you add 750 g of fruit, which you can then sweeten to your liking and dilute with a little water. The juicer has the advantage that coarse fruit parts, such as seeds, are collected and only the juice remains. You can also juice blackberries by using a blender and pureeing them. Then strain the mixture through a fine sieve and collect the juice.
Make your own blackberry compote or sauce
- 450g blackberries
- 65g sugar
- 3 tsp lemon juice
- 7 tbsp water
- 2 tbsp cornstarch
Bring 300g blackberries, lemon juice, sugar and 3 tablespoons water to the boil in a saucepan. After about 5 minutes, add the remaining blackberries. In a bowl, mix the cornstarch with 4 tablespoons of water and add the mixture to the pot to thicken (optional if youwould like a dessert sauce; leave more liquid for compote). After four more minutes the compote is ready.
Blackberry recipes for cakes – quick crumble cake
What would a collection of fruit recipes be without it?good old crumb cake? So if you would like to try blackberry recipes for a dessert, we definitely recommend the popular classic. Many people think it is a complicated cake, but that is not true at all. Especially not when it isnotIt is a yeast cake like in our case. What you need:
- 360 g Flour
- 300g sugar, divided
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- Juice and zest of a lemon
- 225 g Butter
- 1 large egg
- 2 TL Vanilleextrakt
- 600g blackberries
- 4 tsp cornstarch
Preheat the oven to 190 degrees and grease a baking pan (approx. 20 x 30 cm). Mix the flour with two thirds of the sugar, the baking powder, cinnamon, salt and the lemon zest. Add the butter, egg and vanilla extract and mix until crumbly. Now spread half of it in the baking tray and press it firmly.
In a separate bowl, mix the remaining sugar with the cornstarch and lemon juice. Stir in the blackberries and spread the whole thing over the cake batter. Then crumble the remaining dough over the top to create the streusel. Bake the blackberry cake for about 45 minutes, until the streusel begins to turn golden brown. But don't overdo the baking time, otherwise the base will burn. Let the blackberry cake cool and cut it into squares.
Fruity blackberries recipes – prepare liqueur
Do you occasionally treat yourself to a glass in the evening to relax? Or would you like to spoil your friend with something special on her next visit? Then there is onehomemade fruit liqueurbut a wonderful idea! Also if you are looking for blackberry recipes to get onePreparing a gift from the kitchen, you can opt for the following recipe. This is how easy it is to make blackberry liqueur:
- 700g blackberries
- 750 ml red wine
- 300g sugar
- 120 ml vodka or gin
Wash and stem the fruit and place it in a bowl. Pour in the wine and mash the berries with a potato masher. Cover the bowl with a clean tea towel and place in a cool place for 48 hours. During this time you should occasionally mash the berries with the potato masher.
Then press the mixture through a fine sieve, collecting the juice, and then through cheesecloth to remove any seeds and larger pieces of fruit. Then put the resulting liquid together with the sugar in a saucepan and cook, stirring, until the sugar has dissolved (about 8 minutes). Take the pot off the stove, add the vodka/gin, stir and let the blackberry liqueur cool down. Pour it into sterilized bottles and seal them.
Notice: The liqueur basically lasts forever in sterilized bottles. However, if they are not sterilized, they shouldthe liqueurbe used up within one year.
Hearty bruschetta with ricotta

- 1 baguette, cut into 2.5cm thick slices
- 1 tbsp olive oil
- 250 g Ricotta
- 200g blackberries
- 1 TL Honig
- 1 tbsp chopped basil or parsley
- Sea salt
Preheat the oven to 175 degrees. Drizzle olive oil over the baguette slices and bake until golden brown, 3 to 5 minutes. Then spread about a tablespoon of ricotta on each slice and decorate with about 2 blackberries per slice. Finally, drizzle honey and sprinkle basil/parsley and a little salt over it.
