- 1 small or medium sized pumpkin of any variety
- 1 ripe avocado, cut into cubes or wedges

How to prepare pumpkin salad with feta and walnuts
Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Wash the pumpkin, de-seed and peel it. Cut it into approximately 2 cm cubes or thin wedges.
- Mix the pumpkin in a bowl with the olive oil and garlic and season with pepper and salt. Stir.
- Spread the seasoned pumpkin on the baking sheet and roast in the oven for 20 to 25 minutes. They are ready when they are soft and start to turn slightly brown.
- Meanwhile, prepare the dressing by mixing the listed ingredients together.
