What is Skyr and is Skyr healthy?
Skyr is an Icelandic dairy product and is becoming increasingly popular among Germans - for good reason. With a high protein content, low calories and a wide range of minerals and vitamins, Skyr is healthy and therefore the perfect oneSupplement to any diet. But is it low-fat quark? Or maybe yogurt? Neither – although it tastes like a mix of the two, Skyr is legally cream cheese. To kill the bacteria, the fresh milk is pasteurized and heated to up to 70 degrees. It is then cooled to 40 degrees and then enriched with good bacteria. After 24 hours, the whey is strained off and what is left is the creamy cream cheese.
Skyr is healthy and, with its high protein content, puts other dairy products such as quark and yoghurt in the shade. Just 100 grams of Skyr provides 11 grams of protein and only contains 0.2 grams of fat. Proteins ensure a long-lasting feeling of satiety, support the maintenance of muscle mass and thus our diet success. So it's no surprise that you can lose weight with Skyr. Ingredients:
- 600 Grams Skyr
- 3 Owner
- 100 Gramm Erythrit
- 60 grams of semolina
- The grated zest of 1 lemon
- 250 grams of blueberries or other fruit of your choice
- 1 TL Vanilleextrakt
Preparation:
- Preheat the oven to 180 degrees and line a baking dish with baking paper.
- Separate the eggs and beat the egg whites in a large bowl with a hand mixer for 3-4 minutes until stiff.
- Beat egg yolks with erythritol and vanilla extract in a separate bowl for 2-3 minutes until fluffy.
- Add Skyr to egg yolk mixture and stir until smooth.
- Add semolina and stir.
- Carefully fold in the egg whites little by little and mix until smooth.
- Pour the dough into the baking dish and scatter the blueberries over it.
- Bake for 40-45 minutes and allow to cool completely.
- And your low carb skyr cake without a base is ready.
No bake strawberry cheesecake
Light, super refreshing and irresistibly delicious – this oneSkyr cakeWithout baking, it tastes particularly good, especially in the summer heat, and is always a pleasure. Here too, you can experiment with the ingredients and prepare the cake with raspberries or blueberries, for example.
Ingredients for the base:
- 160 grams of whole wheat biscuits
- 60 grams butter, melted
- 30 grams of ground almonds or hazelnuts
Skyr filling:
- 700 Grams Skyr
- 100 ml Sahne
- 100 grams of strawberries
- 50 grams of sugar
- 6 sheets of gelatin
- 1 tbsp Vanilla extract
Preparation:
- Line a 23 cm diameter springform pan with baking paper.
- Place cookies in a bowl and crumble.
- Then mix the biscuits, butter and almonds well in a bowl and spread evenly over the base.
- Place in the refrigerator for 15 minutes.
- Soak gelatin in cold water for 5-6 minutes.
- Meanwhile, puree skyr, strawberries, sugar and vanilla extract in a blender.
- Squeeze out the gelatine leaves and dissolve them in a small saucepan over low heat.
- Add about 3-4 tablespoons of the skyr mixture and mix well.
- Add the mixture to the remaining skyr mixture and stir until smooth.
- Beat the cream with a hand mixer for 3-4 minutes until stiff and fold in carefully.
- Spread the Skyr cream on the base and put it in the fridge for 4 hours or preferably overnight.
- Garnish the no-bake strawberry skyr cake with fresh berries and enjoy!
Apple Skyr Cake Recipe
Whether vegan, without sugar or low carb –a juicy apple piealways tastes great. Of course we love the classic, but for a change we would like to bake an apple skyr cake that is just as delicious and fluffy.
Ingredients:
- 6 medium apples
- 300 Grams Skyr
- 100 grams of spelled flour or wholemeal flour
- 80 grams of brown sugar
- 4 Owner
- 1/2 pack of vanilla pudding powder
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 1 tsp baking powder
Preparation:
- Preheat the oven to 180 degrees and line a round springform pan with baking paper.
- Peel apples, cut 4 apples into slices and dice the rest. Mix with the lemon juice.
- Separate the eggs and beat the egg whites in a bowl with a pinch of salt for 4-5 minutes until stiff.
- Beat the egg yolks and sugar in a separate bowl with a hand mixer for 2-3 minutes until fluffy.
- Add Skyr, flour, pudding powder, cinnamon and baking powder to the egg yolk mixture and stir for 1 minute.
- Fold in apple cubes and mix carefully.
- Gradually add the egg whites and stir everything into a smooth dough.
- Pour the dough into the springform pan and top with the apple slices.
- Bake for 35-40 minutes and allow to cool completely.
- And your apple pie with skyr is ready!
Low calorie chocolate cake with Skyr
Healthy and low-calorie brownies for only 170 calories each? Yes, with our Skyr cake recipe it is actually possible! Just as fluffy and chocolaty – perfect for anyone with a sweet tooth!
Ingredients:
- 30 grams of ground oat flakes
- 25 grams of cocoa powder
- 150 Grams Skyr
- 2 Owner
- 100 grams of brown sugar
- 20 grams coconut oil, melted
- 80 grams of dark chocolate
- 50 grams walnuts, chopped
- 1 TL Vanilleextrakt
Preparation:
- Preheat the oven to 180 degrees and line a square baking pan with baking paper.
- Mix ground oats and cocoa powder in a small bowl.
- Melt dark chocolate and coconut oil in the microwave.
- Add sugar, Skyr and vanilla extract and mix well.
- Stir in eggs one at a time and mix until smooth.
- Add dry ingredients and stir.
- Finally, fold in the chopped nuts and pour the dough into the baking pan.
- Bake the low-calorie brownies for 20-25 minutes and let them cool completely.
