This fire brigade cake is guaranteed to quench your cake cravings. The funny name is very easy to explain. The individual layers of the cake are intended to describe a fire department operation.

At the bottom we have the floor, which symbolizes the wood. Then the red cherries are placed on top, which are supposed to represent the fire. And finally there is a layer of firefighting foam: the cream!

This makes the sweet pastry the ideal party souvenir, a hit at the next birthday party and there is guaranteed to be no leftover piece at the coffee party on Sunday.

Brilliant recipe for a fire brigade cake

Tatutata! If you're really hungry for cake, there's only one thing that helps: this fire brigade cake. The different layers make it look quite complicated at first glance, but the recipe is actually quite simple: briefly knead the dough, drain the cherries and whip the cream. Of course it's not that simple, but it's definitely close. Just give it a try.

Ingredients for a springform pan (Ø 24 cm):
For the shortcrust pastry

  • 200 g Flour
  • 100g sugar
  • 100 g Butter
  • 1 egg (size M)
  • 1/2 tsp baking powder

For the filling

  • 600 g morello cherries (in a glass)
  • 50 g cornstarch
  • 1 tbsp sugar
  • 3-4 drops of bitter almond aroma

For the cream

  • 200g whipped cream
  • 200 g Quark
  • 1 packet of cream stiffener
  • 2 packets of vanilla sugar

Optional

  • Cocoa powder
  • Chocolate shavings

Preparation is so easy:

1. First prepare the shortcrust pastry. To do this, knead all the ingredients into a smooth dough. Chill this in the refrigerator for about 30 minutes. Open the oven175 °C top/bottom heatpreheat. A round springform pan (like this one from Amazon*) grease and flour.

2. In the meantime, drain the morello cherries, reserving the cherry juice. Pour 250 ml of this into a bowl, mix with starch, sugar and bitter almond flavor. Bring the mixture to the boil briefly over medium heat so that it thickens, then stir in the cherries again and set the filling aside.

3. Then roll out the dough on a floured work surface and place it in the springform pan. Press firmly with your fingers and pull up a small edge on the sides, approx. 2-3 cm.

4. Spread the cooled cherry filling on the shortcrust pastry and leave for25 to 30 minutesbake in the oven. Then let the cake cool completely and then put it in the fridge for at least 1 hour.

5. Once the cake has cooled, beat the whipped cream with the cream stiffener and vanilla sugar until stiff and mix with the quark. Now spread the cream and quark mixture on the cake and keep it cold until serving. Finally decorate with cocoa powder or chocolate shavings and enjoy.

Fire brigade cake with a streusel layer

For the streusel, knead 100 g cold butter, 100 g sugar and 200 g flour with your hands until coarse streusel forms. Distribute these evenly over the cherries and put the cake in the preheated oven as usual.
