Saxon fire pot: Rustic winter stew with bacon and sausage

Simple recipe for Saxon Dutch oven

If things have to go quickly, the Saxon Dutch oven is ideal. Thanks to some canned ingredients you save time and work. The total cooking time is around 1.5 hours, but you only have to spend half an hour in the kitchen.

Ingredients for 6 servings:

  • 1 can of kidney beans, seasoned with chili
  • 1 small Dose Corn
  • 1 can of green beans
  • 6 medium potatoes
  • 3 carrots
  • 3 onions
  • 1 Paprika
  • 250 g bacon, diced
  • 300 g meat sausage
  • 500 ml meat broth, alternatively vegetable broth
  • 1 liter of pureed tomatoes
  • ½ tube of tomato paste
  • 3 tsp sugar
  • Paprika powder, very hot
  • Salt & Pepper
  • some oil for frying

And it's that easy:

1. Dice onions, carrots, peppers, potatoes and sausage and fry them in a pot with a little vegetable oil. Add the tomato paste and bacon cubes and fry briefly.

2. Deglaze everything with the meat broth and the pureed tomatoes and season with sugar, salt, pepper and paprika powder.

3. Cover the pot and let the Dutch oven simmer on a low level for about 50 minutes.

4. Now add kidney beans, green beans and corn and let everything simmer for another 10 minutes. Taste and adjust seasoning if necessary.

5. Pour the Saxon fire pot into deep plates and garnish with a little parsley.

Saxon fire pot: Here's how to make it vegetarian

The original Saxon recipe for the Dutch oven contains meat sausage, bacon and meat broth. But that doesn't mean that the hearty stew can't be made vegetarian.

Simply replace the meat broth with vegetable broth. For example, instead of meat sausage, you can add sliced ​​Viennese-style veggie sausages if you want to keep the dish close to the original. Bet your guests won't even notice that the stew is vegetarian? But even without a vegetarian “sausage” addition, the pure vegetable stew is wonderfully filling and delicious.
