Green Goddess Dressing Recipe
What actually makes the Green Goddess Salad so special and tasty is the creamy dressing. It was invented back in the 1920s in the historic “Palace Hotel” in San Francisco to honor George Arliss after the opening of the successful play “The Green Goddes” - hence the name. With its wonderfully creamy texture, the dressing not only tastes delicious in salads, but also as a dip or even marinade for chicken and fish.
Ingredients:
- 1 large egg yolk
- 190 ml olive oil
- 180 grams of Greek yogurt
- 30 grams of fresh parsley
- 10 grams each of fresh chives and tarragon
- 1 clove of garlic
- 15 grams of anchovy paste
- 20 ml lemon juice, freshly squeezed
- Salt to taste
preparation
- To achieve the most authentic taste possible, we will make our own mayonnaise for the Green Goddess Salad. If this is too complicated for you, you can replace the egg yolk and olive oil with 200 grams of purchased mayonnaise.
- Place egg yolks, mustard and lemon juice in a large bowl and whisk well,
- Add the olive oil drop by drop and slowly, beating constantly with the hand blender.
- Mix until you get a light and thick mixture.
- Next, mix the homemade mayonnaise with the herbs, garlic and anchovy paste in the blender until smooth.
- Add Greek yogurt and mix everything well.
- Taste and season with salt if desired.
- And voilà – your homemade Green Goddess Dressing is ready!
