Bake marzipan crescents without flour and butter

Vanilla isn't the only Christmas flavor. Marzipan is also an essential treat at Christmas time. That's why you should definitely plan on these unique marzipan cookies as soon as you declare the Christmas bakery open this year. The marzipan is still going througha little almondsand almond oil supplemented.

For 40 pieces:

  • 500 g Rohmarzipan
  • 250g sugar
  • 2 egg whites
  • ½ bottle of bitter almond flavor (oil)
  • 100 g almond flakes
  • optional couverture for decoration

Line a baking tray with baking paper and preheat the oven to 175 degrees top and bottom heat. Mix all ingredients into a cookie dough. To do this, use your hands or the hand mixer with a dough hook. Then you can shape the dough into several rolls (approx. 7 cm long). This task is easier with moistened hands as the dough is quite sticky. Roll the rolls over the almond flakes, then shape them into crescents.

Bake the marzipan cookies for 12 to 15 minutes, checking frequently as they can get too dark very quickly. In the end, only the tips of the crescents should be slightly golden brown - then they are just right. If you want, after the treats have cooled, you can melt the couverture in a water bath and dip the tips of the marzipan crescents into it.

Notice: It is important that you adhere to the temperature, baking time and setting instructions, otherwise the crescents will burn quickly or become too dry and hard.
