Bake cakes in autumn with seasonal fruits

Moist pumpkin cake with frosting on the tray

If you need a quick cake in the fall, then this recipe is just right for you. The list of ingredients may seem a bit long, but that shouldn't fool you. The preparation itself is really quick and easy, so the sheet cake is perfect in autumnfor a last minute dessertsuitable.

  • 240 g Flour
  • 2 tsp cinnamon
  • 1 teaspoon kosher salt
  • 1 tsp baking powder
  • ½ TL Natron
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 115g softened butter
  • 220g brown sugar
  • 100g sugar
  • 4 large eggs
  • 1 TL Vanilleextrakt
  • 425 g pumpkin puree

Prepare the pumpkin puree by adding the pumpkinpeel depending on the variety, dice, cook until soft and then mash.

Preheat the oven to 175 degrees and grease a baking tray (approx. 22 x 33 cm). You can also use baking paper and leave it hanging out the sides so that you can later lift the cake whole out of the tray. Now mix the dry ingredients in a bowl. In another bowl, beat the butter and sugar until fluffy. As soon as the mixture has taken on a lighter color, you can gradually stir in the eggs and then the vanilla extract and the puree and spread the dough on the prepared baking tray.

Bake the cake for 30 minutes (test with a toothpick) and then let it cool. In the meantime, you can prepare a frosting to top the fall cake with. For this you need:

  • 4 tbsp softened butter
  • 250g powdered sugar
  • 1 TL Vanilleextrakt
  • Pinch of kosher salt

First, beat the cream cheese and butter until creamy and then add the powdered sugar. Stir until there are no lumps and finally add the vanilla extract and salt. Once the cake has cooled, brush it with thisCream cheese frostingand crumble ginger biscuits over it if you like.

French Invisible Apple Pie (Gâteau Invisible)

  • 140 g Flour
  • 1 tsp baking powder
  • 3 tbsp white miso
  • 30 g Butter
  • 120 ml milk
  • 3 large eggs
  • 130g sugar
  • 1.1kg apples, peeled, cored and thinly sliced ​​(the thinner the better)

Grease a loaf tin and line it with baking paper as shown in the picture. This will make it easier for you to remove the finished cake from the pan later. Then sprinkle a little flour over the surfaces and tap off the excess. Preheat the oven to 190 degrees.

In a bowl, mix flour and baking powder and set aside. In another bowl, mix the miso and butter together well, add 2 tablespoons of milk and stir until all lumps have disappeared. Then add the remaining milk.

In another bowl, use a hand mixer to mix the eggs with the sugar until a light yellow mixture is formed, to which you then add half of the flour mixture. Then stir in the milk mixture and then the remaining flour. As soon as there are no more lumps, fold in the apple slices.

Now distribute these dough-coated disks evenly in the baking pan. Make sure that the straight sides of the slices run along the sides of the mold. Once you get about an inch below the edge, press the apple layers down and continue arranging. Arrange the last layer in a scale-like manner and cover with the remaining dough. Gently tap the mold on the table to remove any air holes.

Bake the fall cake for 65 to 70 minutes, separating it from the sides of the baking pan with a knife after 10 minutes of cooling time and allowing it to cool for about 2 hours before removing.You can serve a delicious caramel sauce with the cake.

Tipp: If you want, you can add chopped walnuts to the dough mixture to create an apple and walnut cake. The nuts are also suitable as a topping.

Bake pear and chocolate cake in autumn

  • 250 g Flour

  • 120 ml milk

Preheat the oven to 170 degrees and grease a springform pan (Ø 22 cm) or line it with baking paper. Sift the dry ingredients into a bowl and stir them together well. In a separate bowl, mix the butter with the sugar, then add the vanilla extract and gradually the eggs. Now add the flour mixture in two portions, alternating with milk, stirring well after each portion, but not too much.

Spread the dough in the mold and press the pear slices into it. Bake for 45 to 55 minutes (do a toothpick test) and then let it cool for 10 minutes before removing the springform pan to let the fall cake cool completely.

The autumnal cake can be topped with powdered sugar and/or maple syrup.
