Ingredients:

30g dried dandelion root pieces/2 tablespoons roasted dandelion root
1 teaspoon roasted chicory root
1 teaspoon cinnamon shavings

  • Simply spread the root pieces in a single layer on a baking tray and roast them in the oven at 180°C for about 10-20 minutes, stirring halfway through.
  • Place the roasted roots, cinnamon shavings and water in a pot and bring to a boil.

Dandelion Recipes: Lemon Cake

Ingredients:

250 g Flour
100g sugar
1/2 teaspoon salt
230g unsalted, very cold butter, cut into small cubes

For the filling:

300g sugar
30 g Flour

Zest of four lemons
Lemon juice from 4 lemons
1 teaspoon vanilla extract
100 g freshly picked dandelion flowers
Powdered sugar for dusting

For the shortcrust pastry:

  • Preheat the oven to 180°C. Grease a large pan with butter or cooking spray.
  • Mix flour, sugar and salt.
  • Using a pastry cutter, work in the butter until the mixture resembles coarse flour.
  • Using the bottom of a drinking glass or measuring cup sprayed with cooking spray, press evenly into the mold.
  • Bake for 20 minutes until the dough starts to brown slightly around the edges.
  • Allow to cool at least until the pan can be easily handled with your bare hands, about 15 minutes.

For the filling:

  • Mix sugar and flour together.
  • Then add the eggs, zest and juice and stir until well combined.
  • Pour over the crust and bake for 20-25 minutes until the filling is mostly set. A tiny bit of wobble in the middle is okay.
  • Let cool in the fridge for a few hours, then sprinkle with powdered sugar and dandelion flowers.
  • Using a bench scraper or a sharp knife sprayed with cooking spray, cut into squares.

2 tablespoons olive oil
1 onion, diced
2 carrots, peeled and sliced
2 cloves of garlic, minced

600 g chicken broth
1 package frozen cheese tortellini
400 g chopped dandelion greens
5g chopped fresh basil leaves
20 g grated Parmesan cheese

  • Heat oil in a pot over medium-high heat.
  • Add onions, carrots, garlic, kosher salt, and pepper and cook until tender and crisp, about 5 minutes.
  • Add broth and greens and bring to a boil.Add tortelliniand cook until the tortellini is al dente and the greens are tender, 5-7 minutes.

Dandelion recipes: spring salad with strawberries

Ingredients:

2 tablespoons olive oil
1 medium red onion, sliced
10 ripe strawberries, sliced
2 tablespoons balsamic vinegar
1 bunch of dandelion herb
1/2 teaspoon Dijon mustard
Salt and pepper, to taste

  • Heat the olive oil in a nonstick skillet over medium-high heat.
  • Add the sliced ​​onions and a good pinch of salt.
  • Cook, stirring frequently, until the onions are soft, lightly browned, and reduced to about 1/3 of their raw volume. You may need to reduce the heat gradually as the onions will shrink. This process takes about 30 minutes.
  • Meanwhile, in a small bowl, toss the strawberry slices with 1 teaspoon balsamic vinegar.
  • Wash the dandelion greens, changing water several times and dry them thoroughly. Cut into bite-sized pieces if desired.
  • When the onions are almost cooked, add the remaining 1 tablespoon + 2 teaspoons balsamic vinegar to the pan and cook until the vinegar coats the onions, about a minute.
  • Remove the onions from the heat and stir in the Dijon mustard.
